Apple Pie with Low Calories

  • A wonderful apple pie, in an easy and simple way. Follow recipe.

Ingredients: 24-25 cm round mold, simple, total time: 60 min. 12 servings
  • 250 g of apples/ peeled and seeds cut into cubes

  • 200 g of peeled almonds/ finely ground

  • 250 g of lemon yogurt

  • 50 g of extra virgin olive oil

  • 50 g of potato starch

  • 3 egg whites

  • 2 egg yolks

  • 60 g of granulated sugar/or 30 g of stevia

  • 30 g of lemon zest/grated/3 lemons

  • 7 g of baking powder

  • a vanilla bean or extract

  • powdered sugar/ sprinkle to taste

Preparation:
  1. Prepare all of the above ingredients as described above.

  2. Grind the almonds in a super chop until you get a fine powder.

  3. Pour the ground almonds into a deeper bowl and mix with the potato starch, then add the lemon yogurt, baking powder and a little oil, mix well again into a uniform mixture. Leave the mixture to rest for 15 minutes.

  4. Meanwhile, beat the eggs in another bowl, mix with the stevia, or crystal sugar, add the vanilla, lemon zest, and mix with a hand whisk until you get a frothy mixture of a lighter color. Add this mixture to the first mixture with yogurt and mix with a spatula from the bottom to the top.

  5. Peeled apples and seeds, cut into smaller cubes and add to the dough.

  6. Take a baking tray about 24 cm in diameter, and coat the bottom and sides of the mold with butter and flour. Pour the mixture into a mold and flatten the bake for 5 minutes in a preheated oven at 200 °C, then reduce to 160 °C and bake for about 35–40 minutes. Test the dough with a toothpick.

  7. Leave the cake to cool a bit and then gently separate the cake from the side of the mold with a knife and remove the hoop, turn it upside down and sprinkle with powdered sugar. Buon appetito!
