Beans Meatballs Lena
Bean meatballs fantastic, very tasty and easy to prepare, you can combine them with some cooked sausage next to it, and some cabbage salad. Follow recipe.
Ingredients: medium, total time: 120 min. 24 balls
700 g White beans
1 onion
2 garlic cloves
1 bunch of primroses
1 Tablespoon red pepper,
pepper, salt, dry spice to taste
4 Tablespoons breadcrumbs.
4 larger leeks
Topping:
50 ml Oil
1 teaspoon spicy red ground pepper
200 ml of tomato juice
Parsley leaves chopped to taste
2-3 mozzarella cut into slices

Preparation:
To make these meatballs, soak white beans in water the day before.
Finely chop the onion, take the beans and shake out the old water, and pour into the same pot and onion and put the water (1 finger above the beans) to cook and cook the beans at a low temperature until it softens well,
During that time, cut the leeks into rings, put all the leeks in a pan and pour in the oil and let them simmer for about 10 minutes. Put the leeks in a round pan that will go in the oven.
When the beans are done, squeeze them well.
Finely chop the primrose, and place in a pot with the beans that have been pressed, add salt, pepper to taste, dry spice, finely chopped garlic, 1 tablespoon red sweet pepper, 3 tablespoons pretzels, and mix everything well, you can also mix with your hands.
Make meatballs and then roll them in breadcrumbs and arrange them over the leeks in the pan. Don’t make too many big meatballs!
When you are done with that, then you will make a topping for the meatballs.
In 50 ml of oil when heated, pour 2 tablespoons of allspice ground pepper, and fry it a little, and immediately pour tomato juice and cook for 15 minutes.
When done, pour over the meatballs and put the mozzarella feta on top.
Bake in the oven at 200 °C / 20 min.
