This cookie is based on a cherished family recipe, known for its delightful taste, moist texture, and softness. It is simple to prepare. Below is the recipe, which yields results surpassing those of a pastry shop. Please follow the instructions provided.
Ingredients: 24 pieces, total time: 70 min, standing dough 30 min in refrigerator
cookie cutter 5 cm in diameter
and one smaller mold 2 cm in diameter
380 g of flour
250 g butter or margarine
150 g of sugar
1 lemon peel/ grated
1 egg
3 vanilla sugar/ 30 g
50 g sugar powder
I used jam of plum, but you can also some other than apricot, peach strawberry that you prefer or have.
Preparation:
Cream 250 grams of butter with 150 grams of sugar, the zest of one lemon, and one egg. Mix thoroughly, then gradually incorporate 380 grams of flour, adding more as necessary until the dough reaches a gooey consistency.
Transfer the dough to a board and complete the mixing process. Roll it out with a rolling pin and cut the dough using a round mold with a 5 cm diameter. The dough should be 4-5 mm thick.
Accurately determine the total number of biscuits by using a 2 cm diameter mold to cut the second portion of the dough, ensuring they are in pairs. Arrange them on a baking tray and bake gently at 160 °C for 15 minutes, ensuring they remain pale rather than turning brown.
Once prepared, the biscuits will improve in softness over the next 1–2 days.
Optionally, dust them with powdered sugar.
