Collard Green Soup

  • Collard Green soup with sour cream is traditional soup in Serbia, It's very healthy and full of vitamins. This is one of the simplest way to preparation, with few ingredients you will get a delicious soup. Follow recipe.

Ingredients: easy, total time:45 min., 4 persons
  • 100 g dried meat / meat bacon, ribs

  • 2 connections of young Collard green leaves

  • one larger leek, finely chopped

  • 200 ml sour cream

  • 1 liter of water

  • oil and spices as desired

  • dry spice /Vegeta to taste

  • salt and pepper to taste

  1. Finely chop the meat and leeks and fry them in a little oil with the addition of spices.

  2. In another pot, add the greens to a liter of boiling water and boil them briefly.

  3. When the greens are half cooked, add the fried meat and leeks, and then the spices as desired to taste. When the soup has cooled, stir in the sour cream with a little liquid from the soup, then pour everything to the soup.

  4. The soup is served cold.

NOTE: It is recommended not to heat the greens, because like some other foods, heated greens become toxic in some way. It is believed that, like spinach, cabbage contains a higher amount of nitrates, which are converted into toxic nitrites when heated, and they are very harmful to the human body, especially to the kidneys. So, if you have leftover greens from the previous meal, it is best to eat it cold, and avoid reheating either in the microwave or in the oven.
