Creamy Corn Soup

  • Various meals can be made from corn sugar, but one of them is soup, it is very easy to prepare and is ready quickly. Creamy healthy corn soup with leeks, a real treat in a phenomenal taste! Follow recipe.

Ingredients: simple, total time: 35 min.
  • 30 ml of olive oil

  • 15 g butter

  • 1 large head of finely chopped onion

  • 1 leek stalk, only white and light green part

  • 4 cloves of mashed garlic

  • 1/4 teaspoon ground smoked paprika

  • 500 g of frozen or fresh corn

  • salt and pepper to taste

  • 1 liter of vegetable soup -can also be chicken

  • 250 ml of cooking sour cream

  • fresh parsley for sprinkle

  1. Pour oil into a large pan add finely chopped onion, fry until onion softens, add leeks, previously cleaned, washed and chopped into smaller strips and fry all together until leeks soften, add a butter and mix well.

  2. Add the mashed garlic and until the garlic smells good, add smoked paprika.

  3. Add the corn, simmer all together for about 5 minutes, then add salt and pepper to taste.

  4. Pour in the 1/2 vegetable soup, reduce the temperature for 10 min. or until the corn is cooked through.

  5. When the corn has softened, remove from the heat and using a stick mixer, blend the mixture, until it becomes creamy.

  6. Adjust the density of the soup to your taste, by adding vegetable soup.

  7. Season to taste with salt and pepper, pour the cooking cream and cook at a low temperature 10 min. or until it starts to thicken.

  8. Sprinkle with finely chopped fresh parsley.

  9. Serve warm.
