Croissants with Pistachio

  • Beautiful and delicious croissants with the taste of pistachio, it is a simple preparation. Follow the recipe.

Ingredients: very easy, total time: 75 min, 6 persons

Dough :

  • 500 g flour

  • 250 ml of milk

  • 1/2 cube of yeast

  • 1 teaspoon of salt

  • 1 teaspoon of sugar

  • 100 ml of vegetable oil

  • 1 grated lemon peel

  • 1 bag vanilla sugar/ 10 g

Pistachio Paste:

  • 380 g raw shelled pistachios


Pistachio Paste:

  1. To remove brown skin, bring a pot of water to a boil.

  2. Add pistachios and boil 10 minutes after, remove from heat.

  3. Let sit for 1–2 minutes and drain.

  4. Remove the blanched pistachios onto a clean kitchen towel.

  5. Rub it gently and peel off the brown skin.

  6. In a food processor, put cleaned pistachios and process for 2 minutes, until paste.

  7. Add ¼ cup of water and continue to process for another minute, or until nice and smooth.

  8. Now you get the coating Pistachio paste.


  1. Pour sugar, salt, and yeast into lukewarm milk. Allow to rise for 15 minutes.

  2. Then knead the dough together with the other ingredients and leave it to rise for 40 min to 1 hour.

  3. Divide dough.

  4. Make balls from the dough, roll them out and cut 6 triangles with a knife, then put the filling in each with a spoon, pistachio paste.

  5. Roll them up and place them on baking paper in a baking tray.

  6. Bake the rolls for 20 minutes at 250 °C.

  7. Roll the cool rolls in sugar in powder and serve.
