Beans on My Way Lena Beans in the Serbian way, my recipe. I always make that way, it is very tasty, and they are looking for more. We are used to eating it stewed in Serbia, but here in Italy they combine it with dough especially for beans, and it is very tasty. Follow recipe. Ingredients : medium, total time: 2h and 30 min. 6 servings 300 g white beans or brown beans 1 onion/ finely chopped 4 clove garlic/ finely chopped 2 carrots/ cut into rings 2 primrose roots/ finely chopped 1 parsley leaves/ finely chopped 1 hot pepper 50 g bacon/ diced 200 g dried sausages/ cut into rings 1 teaspoon salt 1 Tablespoon dry spice (herbal) 2 Tablespoon flour 1 Tablespoon sweet ground paprika 1 teaspoon hot pepper Preparation: Wash the beans, put them in a deep pot and pour about a liter of cold water over them, and then put them to cook for about 20 minutes, during which time prepares the other ingredients. To prepare the beans, peel and finely chop the onion. Peel and chop 2 cloves of garlic, peel the carrot and the root of the primrose, wash and cut into cubes, and wash the hot pepper, peel it from the seeds and finely chop. Prepare the bean powder in the following way: Pour a little oil into a deeper pan, about 3–4 tablespoons, and add the finely chopped remaining garlic and put the oil to heat slowly. If the oil has warmed up, add two tablespoons of flour, mix it briefly, then add sweet and hot pepper and mix the mixture well. Pour the finished mixture into the beans, stir to melt the mixture, and cook the beans on low heat, stirring often for about 15–20 minutes, just to cook the flour from the mixture nicely. Take care that your beans do not burn because they are thick. Serve the prepared beans warm with a salad as desired or macaroni like Italians. Ingredients: simple, total time: 60 min. 4 servings 350 g minced meat for Bolognese 100 g bacon pork cheek / diced 250 ml tomato juice 2 Tablespoons of tomato paste 400 gr spaghetti 1 stalk celery/ chopped 1 carrot/ finely chopped 150 ml meat broth 1 teaspoon thyme 1 teaspoon basil 1 teaspoon oregano 1 teaspoon ground red sweet pepper 2 Tablespoon extra virgin olive oil/ to cook pasta and bacon pepper, to taste salt to taste Parmesan cheese grated/for sprinkle Preparation: Start the first preparation of the sauce by chopping: the celery, onion, and carrot together in a blender, and set aside. Fry the diced bacon in a pan with little oil, 7-8 min. Put the fried bacon on the side. Put all the blended vegetables in a deep pan in the same oil where the bacon was fried. Simmer for about 5 – 7 minutes. After 7 minutes of stewing, add the minced meat. Cook about 15 minutes with occasional stirring. Add the tomato juice, tomato paste, meat broth, salt, pepper, oregano, basil, red ground pepper, thyme. Cook for 35 min. Be careful not to add too much salt because the bacon is already salty! 10 minutes before the end, put the bacon in the sauce stir, occasionally. When you are completing the cooking of the sauce, boil the spaghetti in plenty of lightly salted and water, (put also 1 tablespoon of olive oil in the water , 1 liter per 100 g of spaghetti), taking care to drain them alla dente. Cook the spaghetti for about 8 minutes. Put the spaghetti back in the same pot where they cooked. Ingredients : medium, total time: 1h 45 min. 1/2 cube of fresh yeast/25 g 2 eggs 40 ml milk 1 Tbsp sugar 1 teaspoon salt 3 Tablespoon oil 800–900 g flour Preparation: Activate the yeast in a small amount of warm milk with sugar and a little flour. Wait for 20 min. Whisk the eggs and add the remaining milk. Pour the yeast and the mixture with milk into the sifted flour, then knead the elastic dough. Divide the dough into 6 equal balls. Roll out four balls with a rolling pin the size of a baking sheet, and grease with oil. Arrange them one over the other, without the fourth. Cut them into 8 parts, starting from the middle, but not cutting to the end, to remain approximately 2 cm. Transfer each leaf of the triangle, which we cut, to the one next to it and fold it from below. From the second ball of dough, form a smooth ball and place it in the middle, for the center. Roll out the fourth with a rolling pin and cut it with a roller, which makes a grid. Place it over a smooth ball, for the center. In the beginning, leave the little dough aside, the size of a walnut, and make a cross out of it for decoration. Develop a small crust and cut across. Leave the bread on warm to rise. When it grows, coat it with egg yolk, sprinkle it with seeds, and bake it in a preheated oven at 170 °C, until the dough is baked. Check the dough with a toothpick to see if it is done. During baking, you can put aluminum foil if your oven gets hotter! Place the dough on a floured work surface. Using a rolling pin or a hand-held pasta machine, spread the strips one mm thick. If you make the tagliatelle completely by hand, then sprinkle the strips well with flour and roll them. Then cut the thickness you want with a knife. Unscrew the rolls and “throw” them on the floured cloth. If you are cutting tagliatelle with a pasta machine, then simply pass the melted strip through the tagliatelle knife. If you cook them the same day, then let them dry for at least half an hour before cooking. Or dry them for a few days, turning them with your fingers from time to time and separating them. When dry, leave them in a pasta jar and use them for the next few months. We know that they last for half a year and that they don't miss anything after cooking – neither in taste nor appearance. Cook them in plenty of salted boiling water for 10 to 13 minutes, depending on the freshness, dryness, and your own taste. Ingredients: simple, total time: 70 min. 4 servings 8 peppers/cleaned from the inside and from the stems 4 pieces of potatoes/ small cubes 1 larger head of silver onion/finely chopped 1 zucchini/grated 1 large cup of blanched mushrooms/ can be any mushrooms/ small cubes 3 Tablespoons ajvar/ or tomato paste clove of garlic/ finely chopped primrose leaves/ finely chopped salt, pepper and other spices to taste olive oil and butter 1 cup of rice/ 150 ml little vegetable broth/ 250 ml Preparation: Cut onions, potatoes, and mushrooms into as small cubes as possible. Grate the zucchini. Peel the peppers. When the vegetables are prepared, start by simmering the onions in a mixture of olive oil and butter. As soon as the glass is added, potatoes and porcini mushrooms are added. They are left briefly with stirring to warm up, add ajvar or tomato paste and everything is seasoned with salt, pepper, and a mixture of spices, which you normally use or like. Finally, add grated zucchini, finely chopped garlic, and parsley. Stir the mixture well, try whether it is seasoned to taste, and stuff the peppers. They are arranged in a refractory, ceramic, or any container that has a lid, on a little soup stock (if not, then melt half of the soup cube in hot water). Place another finely chopped potato between the peppers, just lightly salted. Otherwise, put the rice previously only briefly soaked in water. This is because the juices that the vegetable release are picked up by rice. In this last case from the pictures, potatoes, which will then be very tasty and there will be no water left at the bottom of the bowl, but everything will be nicely compact and baked. Put a few more pieces of butter on the potatoes or rice, because of the fat and even better taste. Cover everything and place it in an unheated oven. Turn on the oven to 200 °C and bake for 1h and 30 min., without lifting the lid. The contents are nicely browned and the potatoes or rice are not hard and toasted because they are cooked in their own juice and steam. Serve warm. Original Tiramisu Cake This is the original recipe of the Italian Tiramisu dessert. A creamy, bubbly cake that everyone loves, it's very easy to prepare and ready quickly. You will only need a few ingredients for this. The cake is phenomenal! Follow recipe. Ingredients: simple, total time: 50 min. 300 g Savoiardi /Ladyfingers 500 g of Mascarpone 4 medium eggs (about 220 g — without shells) 100 g of sugar 300 ml of coffee (better if espresso) 2 Tablespoons of rum or Marsala (optional) unsweetened cocoa powder For this recipe, we opted for: A ceramic baking pan of 30 × 19 cm. An electric stand mixer really is a great help for making a perfect tiramisu. First, make the coffee. For a quick and delicious Italian coffee, I used an Espresso Machine. Now add 2 Tbsp of rum or Marsala wine (that’s optional. If you don’t like liqueurs, or you are making tiramisu for children, don’t use it) then set aside and let it cool. Separate egg whites from yolks and remember that in order to whip the egg whites pretty stiff, there should not be any trace of yolk. Take a bowl and whip the egg whites until stiff: you will get at it when the egg whites will not move if you turn the bowl over. When ready, set aside. Now in another bowl (or the clean same one) whisk the egg yolks with the sugar until pale and smooth, 3–5 minutes. When ready, add Mascarpone cheese. Whisk the cream slowly with the electric mixer. Now add stiffen egg whites. Mix with a wooden spoon, from bottom to top. Mix slowly until it’s smooth and creamy. Now dip quickly Savoiardi Ladyfingers into the coffee. Then place them in a ceramic or glass cooking pan. Spread the mascarpone cream on top of the Savoiardi. Add another layer of Savoiardi and then cover with more mascarpone cream. Finally, sprinkle with cocoa powder. Let rest 3 hours in the refrigerator before serving (even better if you make the tiramisu the day before, letting it rest all night long in the fridge). You can add chocolate flakes on top according to taste. Buon appetito! To check the dough, stick the blade of a knife in the center of the cake. It should come out dry. Otherwise, extend the cooking time for 5 minutes. Unmold and wrap the cake in cling film while waiting for it to cool. This will keep its humidity, and therefore its softness. Prepare the icing by whisking together the icing sugar and lemon juice. Remove the cling film. Place the cake on a wire rack and cover it with icing. Let stand for a few minutes while the icing hardens. And now, the snack is ready!
