Then dry them well with a kitchen towel. Make 3 cuts on each side of the fish using a sharp knife. Salt the fish on all sides and add Vegeta bio seasoning to taste, including the inside of the fish. With the help of a brush, grease the baking dish with olive oil. Lay the fish next to each other. In a small bowl, pour sweet ground pepper, flour, and add olive oil, mix it all well. In another bowl, squeeze half a lemon, add olive oil, parsley, chives and chopped garlic, mix everything well. Stuff the inside of the fish with parsley, chives, lemon and garlic. An ideal, soft, and delicious treat for unexpected guests, it pleases in every season; it is refreshing in the summer and sweet in the winter. Let's make it together. Follow the recipe. Roll with   Walnut cream Ingredients : simple, total time: 35 min. Biscuit : 4 eggs/ separated egg whites and egg yolks 4 Tbsp granulated sugar 4 Tbsp flour 1 vanilla bean/ or 1 ampulla extract and : 70 ml little warm milk for sprinkle biscuit Baking tray 32 x 38 cm Cream : 200 g ground walnuts 130 ml of milk 4 Tbsp granulated sugar 1 bag vanilla sugar/ 10 g 5 ml rum liqueur/ or vanilla extract - 1 ampoule For Decoration : powdered sugar to taste 200 ml sweet cream chocolate topping walnuts/ ground or kernels Roll with   Walnut cream Preparation : Biscuit : Separate the egg white from the egg yolks. Beat egg yolks with sugar until foamy, until the mixture is lighter. Add vanilla bean and mix briefly. Now gradually add the flour and beat at the same time. In another deep bowl, beat the egg whites until stiff, then add them gradually to the egg yolks mixture. Mix with a spatula to combine everything well by using technique from bottom to top. Line a 32 x 38 cm baking tray with baking paper, brush with a little oil. Pour the mixture in a baking tray, level it evenly. Bake it in a preheated oven at 180 °C, for about 13–14 minutes. When the biscuit is baked, immediately transfer it to the baking paper that you previously sprinkled with powdered sugar, (you can also do it on a damp cloth, I did it like that). Remove gently the baking paper and roll it into a roll carefully, using baking paper or a cloth, let it rest for about 5–10 minutes. While the biscuit is resting, make the cream for the roll. Roll with   Walnut cream Cream : Pour milk, sugar and ground walnuts into a saucepan and heat on low to moderate heat, to the boiling point. Wait for 7 minutes, the sugar to be absorbed together with the milk and nuts. Now add rum or vanilla extract and stir until the cream thickens. Cooking takes about 10 minutes. Unroll the roll, brush the biscuit with warm milk using a brush, then spread it with the walnut cream and flatten it. Roll it up again, cut the uneven ends about 1.5 cm, then wrap it like a sausage, then transfer it to the refrigerator to chill for 1 hour. Then sprinkle with powdered sugar, cut into slices and serve with tea or coffee. Buon appetito! It is a very simple and quick recipe. Follow the recipe. Pasta with   Sardine   my   way Ingredients : simple, total time: 75 min. 4 serving 360 g of fresh sardines/ or 3 cans without oil 200 g of wild fennel/ cut into ribs 3-4 Tbsp tomato concentrate + 300 ml water + 1/4 tsp of sugar 1 medium head of onion/ finely chopped 3 salted anchovies 50 g breadcrumbs olive oil EVO to taste 3 Tbsp pine nuts salt and black pepper to taste 1 whole chili pepper/ as you like Pasta with   Sardine   my   way Preparation : First, prepare all the ingredients as described above and place them near you. Mix the tomato concentrate in a small pot with water and a little sugar and set it aside. Clean the fresh sardines and make an incision in the belly, open and remove the bone. Wash them and cut them into medium pieces. Set aside. If using canned sardines, just strain them and cut them into medium pieces. Set aside. Wash the fennel well, remove the stem with the flowers, cut into ribs and cook for about 10 minutes. Save the water in which the cormorant is cooked and drain them well in a strainer. When the fennel has cooled down, chop it finely. Set aside. Finely chop the onion and fry it in olive oil until it becomes glassy and soft, now add anchovies and spices and fry for a minute. Then add chopped sardines, fennel and tomato purée, mix everything well and cook for about 15 minutes to low moderate heat. Meanwhile, prepare the pasta by cooking it in the fennel liquid in which it was cooked. Add more water as needed. It is said that Field Marshal Radetzky (after whom the Radetzky March is named) brought the recipe to Vienna. Midzin Ajvar Old recipe Ingredients : simple, total time: 3 large blue eggplants 12 bell peppers / 4 for each eggplant 2–3 cloves of garlic 3 heads of onion salt to taste a little vinegar 3 Tbsp of oil Midzin Ajvar Old recipe Preparation : Put the eggplants on a high heat to bake, or on a hot plate lined with aluminum foil. For each eggplant, roast 4 bell peppers on the hearth plate or stove. When the peppers are roasted, put them in cold water, and carefully peel the eggplants - preferably with a small spoon, so that not even the smallest skin remains. Remove the upper skin from the peppers and place them together with the eggplants in a wooden bowl in which the garlic has been previously pounded. Mash everything well with a wooden pestle until it becomes a fine and uniform mass. Add grated onion, salt to taste, a little vinegar and 3 tablespoons of oil. Mix well. Transfer the mixture to a glass bowl, pour a little more oil on top, and serve. Ajvar prepared in this way can be stored in the refrigerator for several days, and thanks to its quick preparation and taste, it is also excellent for fasting days in oil. Buon appetito! Cheese  Pastry Ingredients : simple, standing time: 2h, total time: 2h 30 min., about 40 Dough: 250 g flour 150 g butter/ grated or chopped 200 g crumble cow cheese/ or feta Greek cheese 1 bag baking powder/ 10 g 1.5 tsp salt 1 large egg For Sprinkle : Cumin as desired Sesame seeds as desired and : 1 scrambled egg for spread Cheese  Pastry Preparation : Mix salt, flour, cheese and baking powder, grated butter and egg. Combine it all well. When you have a good combined dough mixture, wrap it in foil and leave it in the fridge for 2 hours. Roll out the dough to the thickness of a 4-5 mm and cut into sticks 2 cm or roll out the dough with a mold according to your preference. Place them on baking paper in an oven tray. Brush with scrambled egg and sprinkle with sesame seeds or cumin. Bake in a preheated oven at 180°C for about 15–20 minutes, until they turn golden brown. Serve warm with yogurt or sour milk.
