## Crafting Healthy Strawberry Jam: A Natural Delight with Chia Seeds and Honey

  • Strawberries are highly beneficial for health, enhancing heart function, digestion, and brain performance. They are rich in fiber and vitamin C. In spring, the aroma of strawberries is unmatched. Preparing homemade jam is an excellent method to capture their fragrance and flavor beyond the season, perfect for desserts like pancakes, as a topping for crispy flakes, cakes, and yogurt. This recipe is crafted without sugar or gelatin, focusing on a natural and healthy approach. Instead of these additives, chia seeds and honey are incorporated for flavor. Ingredients: simple, total time: 35 min. standing time: 30 min. 2 jars
  • 1 g fresh strawberries/ or frozen

  • 50 g of chia seeds

  • 10-20 g of honey/ to taste, is not even necessary - optional

Preparation:
  1. Place the well-washed and cleaned strawberries in a medium saucepan and gently heat them over low heat for about 10 minutes, until they soften and release their juice.

  2. Stir occasionally and, if desired, mash them with a fork or stick blender for a smooth texture.

  3. Remove from heat, add chia seeds and mix well.

  4. Let it stand for about 10–15 minutes so that the mixture thickens.

  5. Add honey to taste, mix and pour into a clean and sterile jar.

  6. You can use this jam for some fruit cakes, pancakes, or as an addition to crunchy oatmeal or yogurt.

NOTE:
  • When washing strawberries, soak them in warm water for half an hour with one teaspoon of baking soda. After that, rinse them well with cold water, then they are ready for use, I always do this because strawberries need to be sprayed a lot in order to grow, and baking soda eliminates all toxins. Be sure to do this for your health, I do the same with lemons, oranges and other fruits that are sprayed like plums. Especially if it is a zest that is necessary for cakes as a topping.

  • Store in the fridge for up to 5 days.

  • You can also pack it in the freezer for up to a month in special boxes with a lid.
