If there is fat, remove excess fat with a knife. First rub the meat with fresh rosemary and 1 clove of garlic that you cut in half. Place the spices in a small bowl and mix well. (salt, pepper, dry seasoning/ Vegeta, juniper berries, nutmeg). (Mash the juniper berries and grate a pinch of nutmeg) Tie the piece of meat with kitchen twine on all sides so that it is compact, and insert the sprigs of rosemary and bay leaf. After that, wrap the meat in aluminum foil and then wrap it in nylon foil, close it well and leave the meat to soften for about 30–40 minutes. Before serving and after the specified time, take a pan, pour 2 tablespoons of olive oil, heat on moderate heat. Add the liquid from the pan from the oven with garlic and heat for a few minutes, then add white wine and stir, wait for the alcohol to evaporate. Remove the garlic, and pour the juice into a small, deep bowl, then add the rest of the liquid from the meat that you opened and mix. Cut the roast beef into thin fillets and arrange on a large serving plate, and pour the juice over the meat with the help of a spoon, serve with baked potatoes or other vegetables and salad. This famous recipe and the name “military” is precisely because in the original recipe no meat is added. Ingredients: medium, total time: 3h. 500 g of beans 1 large (red) onion/finely chopped 3 cloves of garlic/finely chopped 1 large carrot/cut into small or smaller cubes 100 g of fat or oil salt, pepper to taste 1 Tablespoon of ground red pepper 1 Tablespoon of dry herb seasoning/Vegeta 2 bay leaves 1 dry pepper soaked in water for 2 hours with laurel 1 Tbsp of fresh parsley leaf/finely chopped 2 roasted hot pepper as addition/ as you like/ optional Preparation: Soak the selected beans in cold water, taking care to ensure that there is enough water so that the beans do not absorb the entire amount of water during swelling and remain dry. Keep the soaked beans in a cool place and let them soak for 1–3 hours. Then drain the water in which the beans were soaked. Put the beans in a suitable container, pour cold water so that they are soaked and cook 30 minutes. After which the water should be drained and then poured with hot water so that it becomes saturated, add half of finely chopped onion and let it cook with occasional addition of hot water. In half of the hot fat, add the rest of the finely chopped onion and carrot, cut into smaller cubes or grated, and fry everything together until it turns slightly brown. When the beans are half cooked, add fried onions and carrots, dried peppers, previously soaked in cold water for 2 hours, and a bay leaf. Heat the remaining fat, add flour and fry until lightly browned. When the flour turns brown, turn off the heat and immediately add the pounded and finely chopped garlic and paprika powder and mix it all well. When the beans are soft, add salt, and pepper and pour the prepared spray into the beans, stirring constantly so that the spray does not clump. Boil the beans with a splash for another 20–30 minutes, after which the heat should be turned off. Taste and, if necessary, add seasoning and finally chopped fresh parsley leaf. Serve warm.
