Ingredients : simple, total time: 70 min., 4 serving 3 kg of fish (at least 2/3 carp), 300 g of onion/ finely chopped 5 medium potatoes/ peeled and diced or dumplings 2 medium carrots/ peeled and diced 1 parsnip/ peeled and diced 1 medium tomato/ peeled and chopped 2 Tbsp of red ground sweet pepper-allspice 250 ml of cooked tomatoes 2 Tbsp red ground smoked pepper 1 tsp red-hot pepper/ or to taste salt and black pepper to taste 10 peppercorns 1 bay leaf 2. 5 liters water/ or stock (2 cube for soup+water) Fish stew Paprikash   Preparation : Preparing fish : Peel the scales and fins from the fresh fish, remove the entrails from the stomach, cut off the head and wash well. Then cut into desired pieces. Preparing Vegetables : Finely chop the onion and mince the garlic in a machine. Put the tomato in hot water and let it stand for 10 minutes, then remove the skin and chop it into smaller pieces, put it aside. Peel and wash the potatoes and cut them into desired slices or cubes. Clean the carrots and parsnips and cut them into smaller cubes. With this stew, you can also combine frozen vegetables for soup (carrots, potatoes, parsnips). If you use frozen, then use one 300 ml cup of mixed vegetables. If you don't want potatoes, you can substitute them with dumplings. For Dumpling : 2 eggs 7-8 Tbsp flour 1 /2 tsp salt 1/2 tsp dry parsley (Beat the eggs with salt and dried parsley, then gradually add the flour and mix without lumps; the dough should not be thick. Set aside.) Preparation Stew : In a deep 5-liter pot, add the oil and heat over medium heat. Add the chopped onion and fry for a few minutes until it becomes glassy and softened. Add chopped vegetables (carrots, potatoes, and parsnips), mix all well, cover, and cook for about 10–15 minutes with occasionally stirring to low moderate heat. Now add the minced garlic, fish pieces, little salt and black pepper to taste. As soon as the garlic starts to smell, add the finely chopped tomatoes, peppercorns, bay leaf, stir and immediately add tomato juice, water, or stock which you will add gradually 3 times. When it boils, add allspice and ground hot pepper, Cook on low to moderate heat for 45–60 minutes, half covered with adding water or stock. Check the taste and add spices as needed. Towards the end, add the dumplings, separate the dough into smaller pieces with a fork and add to the broth, cook for about 3–5 minutes, on a low, moderate heat. Serve warm with homemade noodles. Buon appetito! NOTE: In this broth, if you want, you can add a piece of hot fresh pepper, fish roe or tomato paste instead of tomato juice. This stew is made from catfish and carp. I added dumplings, but you don't have to do the same. The broth is very delicious and pleasant. If you like it spicy, feel free to add hot fresh or ground pepper. It is served for lunch, but you can also have it for dinner because it is not heavy. Follow my recipe. River Fish soup with fish Roe Ingredients : medium, total time: 90 min., 8-10 serving 3 kg of carp + catfish 300 g of fish roe  3 medium yellow onions/ finely chopped 4 cloves of garlic/ minced 1 celery root/ diced 2 parsnips/ diced 4 carrots/ cut into rings 1 Bay leaf 1 liter of tomato juice  300 ml liter of white dry wine  2 Tbsp of red ground paprika  1 green hot pepper/ chopped without seeds 1 Tsp red ground hot pepper/ or to taste salt to taste black pepper to taste  10 peppercorns 1 liter of vegetables broth/ 1 cube for soup +1 liter of water 1 tsp dry spice Vegeta seasoning 1 lemon juice/ filtered water as needed Dumplings - optional : 2 eggs 1/2 tsp salt 7-8 Tbsp flour 1/2 tsp dry parsley River Fish soup with fish Roe Preparation : Preparation of Fish and fish Roe : Wash the river fish well and remove the entrails, scales, and fins. Then cut them into desired pieces. Set aside. If you want, you can separate the fish from the bones, especially if you have a small kids. It is preferable, you will waste a little time on that, but at least you will be sure that you have done a good job! Mash the fish roe or cut it into smaller pieces. Set aside. Preparation Vegetables : Finely chop the onion and garlic. Carrots cut into rings, and parsnip and celery root into small cubes. Squeeze the lemon juice and filter. Set aside. Preparation of Soup : Take a deep pot of 5 liters, add oil just enough to cover the onion, mix and turn on moderate heat, stir for about a minute and cover the pot. Simmer until the onion softens and becomes transparent, stirring occasionally, for about 10–15 minutes. After the elapsed time, add parsnip, celery and carrot, mix everything well and continue to stew for about 10–15 minutes, stirring occasionally. Now reduce heat, add the fish cut into pieces and minced garlic. As soon as the garlic becomes fragrant after 30 seconds, pour the wine. Wait for the alcohol to evaporate and cook for about 10–13 minutes while stirring, covered. After that, add fresh hot pepper, ground sweet and hot pepper, mix well about 3 minutes, then pour the broth add bay leaf, peppercorns stir and cover. Let it boil. When it started to boil, add tomato juice, water as needed, dry spice Vegeta, salt and black pepper to taste, stir all well, cook on low heat for about 20–25 minutes on low moderate heat. When the fish roe is cooked, check the taste of the broth again and add spices as required, and cook another 5 minutes. At the very end of the stew, beat eggs, parsley, and salt and gradually add flour. The dough must not be too thick! Remove the dumplings with a fork and add to the broth. Cook for another 3–4 minutes. Add the squeezed and filtered lemon juice at the same time and mix well. It is very easy to prepare, and the cooking should take about 3 hours. This is an ideal recipe for a Sunday family lunch. Follow the recipe. Goulash   stew   in   Wine   Ingredients : simple, total time: about 3 h . 4-6 serving 5-6 Tbsp Olive oil EVO to taste 6 yellow onion/ finely chopped 1. 2 kg diced pork and beef meat 2 tsp bio dry spice Vegeta 150 ml white dry wine/ or rose water as needed to be divided 1 tsp salt 1 tsp black pepper 1 bay leaf 3 tsp red ground paprika — allspice 150 ml tomato juice 2 tsp fine corn flour Goulash   stew   in   Wine   Preparation : Prepare all the ingredients as described above. The first thing you will do is finely chop the onion, don't blend it! Pour the oil into a deep 4-liter pot, heat on a low to moderate heat, then add the onion, mix and cover and simmer for about 15 minutes with occasional stirring. When the onion has softened and released its liquid, add bio seasoning to Vegeta and meat and mix everything well. Cover the pot and simmer for about 20 minutes, stirring occasionally every 7–8 minutes, over low-moderate heat. Now add 150 ml of wine, mix, let the alcohol evaporate for about 10 minutes. After that, add 150 ml of water, bay leaf, salt and pepper, stir all and cook for about 80 minutes on a low, moderate heat, covered. After 60 minutes of cooking, add 3 teaspoon allspice and stirs. During cooking, add the same amount of water 5 more times, every 10–15 minutes. After 90 minutes of cooking, add tomato juice, a little water if necessary, stir and cook for another 30 minutes. During this time, mix the corn flour and a 50 ml water and add to all the ingredients, stir well. If it is too thick, add a little water and cook for another 15 minutes. Serve warm goulash stew with polenta, pasta, boiled potatoes or rice, sprinkle with Parmesan cheese. Buon appetito! After the elapsed time, heat the oil on moderate heat in a non-stick pan. Take out the mixture with the chicken and gently add it to the hot oil. Fry each side for about 5-5+6 minutes until they are well browned. Put more pieces at a time. Transfer the fried ready-made chicken bites to a kitchen towel to absorb excess fat. Place the prepared ribs in an oiled baking dish and add water or broth, and one bay leaf. Cover the dish with aluminum foil and bake at 200°C, about 60 minutes. After the specified time, turn the ribs over and add liquid if necessary. Cover again with aluminum foil and bake for 30 minutes. After the specified time, remove the aluminum foil and prick the meat a little, reduce heat to 180 °C, return to the oven and bake for another 45 minutes. While roasting, pour water or broth over the ribs. While the ribs are roasting, peel and wash the potatoes and cut them into smaller pieces, put them in a medium saucepan and cook for about 13 minutes. Remove the potatoes with a slotted spoon and place them in a lightly oiled baking dish.
