##Delicious Lamb Chops with Savory Potatoes

  • Wonderful lamb chops in crispy bacon with soft potatoes. The preparation is very quick and simple. Follow the steps.

Ingredients: simple, total time: 90 min., 4 servings
  • 1 kg of lamb chops in a piece with bones

  • 150 g of meaty bacon/ or smoked bacon

  • 4 cloves of garlic/ minced

  • 2–3 sprigs of thyme/ or artemisia

  • 7 medium potatoes/ cut in thick rings

  • 100 ml of dry white wine

  • 250 ml of vegetable broth

  • 3 Tbsp Olive oil EVO/ or vegetable oil to taste

  • salt and black pepper to taste

Preparation:

Preparation of Lamb Chops:

  1. Finely chop the garlic and thyme and mix.

  2. Rub half of this mixture into the chops, add salt and pepper to taste.

  3. Wrap each cutlet with thin slices of bacon, tie with a string, or toothpick.

  4. Now prepare the potatoes.

Preparation Potatoes:

  1. Peel and clean it of impurities and cut it into 6-7 mm thick rings.

  2. Transfer them to a baking dish, add a little salt, pepper, and thyme or artemisia, and mix everything well.

  3. Add the twisted lamb chops over the potatoes. Add the remaining minced garlic and thyme, pour over the oil, wine, and broth. I used an iron cooker, because it gives every meat a good taste.

  4. Set the oven for 90 minutes at 190 °C.

  5. When the oven is well heated, place the dish and bake for about 30 minutes.

  6. After the specified time, remove the dish and turn the cutlets, return to the oven covered with aluminum foil or a lid, bake for another 30 minutes, pouring over the cooking juices and a spoonful of warm broth.

  7. After the elapsed time, remove the baking dish, and aluminum foil — place the finished cutlets in a serving bowl and cover with the same aluminum foil.

  8. If you used toothpicks to seal the bacon, now is the time to take them out, the same goes for the string.

  9. Return the potatoes and let them boil for another 15–20 minutes.

  10. Serve warm with the roasting sauce, along with baked potatoes.
