  • Preparing an excellent Florentine steak relies on the choice of meat cut, the marinade, and the roasting temperature. With experience or by using a meat probe thermometer, note that a temperature of 48°C will yield a very rare Florentine steak, while a range of 52-55°C will achieve medium doneness. It is generally advisable not to exceed 60-65°C. The meat should be approximately 4 cm thick.

Ingredients: simple, total time: 15 min. 2 servings
  • 2 Florentine steak of 1 kg

  • Olive oil EVO to taste

  • Maldon salt

  • black pepper to taste

  • rosemary as you like

Beefsteak Florence
Preparation:
  1. Before baking, take the steak out of the fridge and dry it well with a napkin.

  2. Put the steak on kitchen paper and heat the grill well, when the charcoal makes a little ash.

  3. Put the meat on the grill and bake it for 3-5 minutes, without turning, then turn steak on the other side and bake it at the same time, and do not pierce it! Sprinkle one side with rosemary to taste.

  4. If the meat cut is very thick, turn the Florentine by placing it with the bone side directly on the grill (standing) for 1-2 minutes. At that point, let the meat rest on a cutting board for a few minutes so that the liquids can be redistributed.

  5. Cut it, season with extra virgin olive oil, Maldon salt, and fresh beaten pepper.
