6 eggs/ separated
6 Tbsp of granulated sugar
6 Tbsp of wheat flour
1 bag of baking powder/10g
Preparation:
Separate the egg whites from the yolks in two bowls.
Beat the egg whites until foamy, then gradually add the sugar and at the same time beat them into stiff peaks. (Do not add sugar all at once because it will not mix well with the egg whites!)
Add the egg yolks, one at a time and beat at the same time. The mixture must be nice and compact.
Mix sifted flour with baking powder, mix gently with a spatula so that the mixture remains airy.
If you are making a roll, line an oven tray with baking paper. If you are making a cake, then put it in the appropriate mold.
Pour the mixture into a tray lined with baking paper and put it in a preheated oven at 180°C, and bake it for about 20-25 minutes, until the pastry gets a nice golden color. If your oven works harder, feel free to cover the sponge cake with aluminum foil.
Check the middle of the pastry with a toothpick, if it's dry, it's done!
After baking, open the oven door and let it cool down gradually for about 15 minutes so that it does not go flat.
Cool the biscuit or roll it up if you are making a roll in an moistened cloth immediately.
