## Delightful Monastery Cake with Jam and Walnuts

  • This cake is a traditional recipe from our monastery, crafted by the monks, and is primarily prepared and served on fasting days. With the inclusion of ground walnuts and jam, the cake is exceptionally moist and tender. It can be prepared quickly and effortlessly by following the recipe.

Ingredients: simple, total time: 35 min.
  • 12 Tbsp of granulated sugar

  • 20 Tbsp of plain flour

  • 1 bag baking powder/ 10 g

  • 400 ml of lukewarm water

  • 1 tsp of baking soda

  • 8 + 4 Tbsp of ground walnuts

  • 4 + 6 Tbsp of homemade jam

Preparation:
  1. Turn on the oven at 200°C.

  2. In a deep container, add sugar, flour, lukewarm water, 8 spoons of ground walnuts, 4 full spoons of jam, baking powder and baking soda, mix everything well with hand whisk. (Instead of walnuts, you can use also hazelnuts, and you can also combine jam). The mixture should be slightly thicker than pancakes.

  3. Pour the entire mixture into a

    30 x 20 cm baking dish, lined with baking paper and level it.

  4. Bake for about 25-30 minutes, depending on the oven. I baked 25 minutes.

  5. Check the dough with a toothpick in the middle, if it is dry, the cake is ready.

  6. When the cake is golden brown on the top, it is finished!

  7. Immediately, while is cake still hot, place the decorative tray over the baking dish and turn the cake over.

  8. Spread the hot cake with 6 spoons of jam and sprinkle with 4 spoons of ground walnuts.

  9. Leave it to cool, then cut it into cubes,and serve with coffee or tea.

NOTE:
  • If you want, you can add vanilla sugar, ground hazelnuts. candied fruits to this cake, instead of plum jam you can add apricot or orange jam.

  • You can keep the cake at room temperature covered or in the refrigerator for up to 7 days, the longer it stands, the better the cake.
