  • 5 medium potatoes/ cut into circles

  • 2 spring onion/ finely chopped

  • salt and pepper to taste

  • Olive oil EVO to taste

  • 1 Tbsp acid apple vinegar

  • 1 Tbsp parsley leaves/ finely chopped

Preparation:
  1. Peel and clean the potatoes and wash them well. Cut into rings 5-6 mm thick. Put them in water and cook for about 25-27 minutes.

  2. While the potatoes are cooking, wash the spring onion and clean the tops that are damaged and remove the root. Chop finely and place in a salad bowl.

  3. Drain the cooked potatoes well and let them cool for about 15-20 minutes.

  4. Put it in a bowl with spring onions, add salt and pepper, pour olive oil and add a spoonful of vinegar.

  5. Sprinkle with finely chopped parsley leaves.

  6. Mix all the ingredients well and put the salad in the fridge to cool for about 20 minutes.
