Potato salad with Spring onions

Salad of potatoes with spring onions offer a delicious and refreshing alternative to red onions. This economical and straightforward recipe allows you to create an exceptional side dish or salad using just a few ingredients. It pairs wonderfully with fish or serves as an excellent side. The preparation is quick and uncomplicated. Simply follow the recipe.
Ingredients: simple, total time:33 min. 3 serving
5 medium potatoes/ cut into circles
2 spring onion/ finely chopped
salt and pepper to taste
Olive oil EVO to taste
1 Tbsp acid apple vinegar
1 Tbsp parsley leaves/ finely chopped
Preparation:
Peel and clean the potatoes and wash them well. Cut into rings 5-6 mm thick. Put them in water and cook for about 25-27 minutes.
While the potatoes are cooking, wash the spring onion and clean the tops that are damaged and remove the root. Chop finely and place in a salad bowl.
Drain the cooked potatoes well and let them cool for about 15-20 minutes.
Put it in a bowl with spring onions, add salt and pepper, pour olive oil and add a spoonful of vinegar.
Sprinkle with finely chopped parsley leaves.
Mix all the ingredients well and put the salad in the fridge to cool for about 20 minutes.
