Potato Salad

  • Potato salad serves as an excellent accompaniment to fish specialties and seafood, offering both health benefits and delightful taste. The preparation requires only a few ingredients: potatoes, olive oil, salt, pepper, red onion, and parsley. It is both quick and simple to prepare. Please follow the recipe.

Ingredients: simple, total time: 45 min. 3-4 serving
  • 5 medium potatoes

  • 1 red onion

  • 1 Tbsp fresh parsley/ finely chopped

  • salt and pepper to taste

  • Olive oil EVO to taste

Preparation:
  1. Thoroughly wash the potatoes and immerse them in a pot of water with their skins intact, adding 1 teaspoon of salt. Boil for 30 minutes, then drain and allow them to cool in a cool place for approximately 30 minutes.

  2. Meanwhile, prepare a deep salad bowl.

  3. Slice the red onion into strips and finely chop a small amount of parsley.

  4. Drizzle a small amount of olive oil into a deep bowl.

  5. Peel the potatoes, ensuring they are free of any dirt. Slice them into rings and arrange in the salad bowl.

  6. Season with salt and pepper, and drizzle with a bit of olive oil.

  7. Continue layering the potatoes in this manner, adding seasonings. Finally, incorporate the chopped red onion, mix, and garnish with parsley.

  8. Serve alongside lemon slices and a fish specialty.
