Potato salad serves as an excellent accompaniment to fish specialties and seafood, offering both health benefits and delightful taste. The preparation requires only a few ingredients: potatoes, olive oil, salt, pepper, red onion, and parsley. It is both quick and simple to prepare. Please follow the recipe.
Ingredients: simple, total time: 45 min. 3-4 serving
5 medium potatoes
1 red onion
1 Tbsp fresh parsley/ finely chopped
salt and pepper to taste
Olive oil EVO to taste
Preparation:
Thoroughly wash the potatoes and immerse them in a pot of water with their skins intact, adding 1 teaspoon of salt. Boil for 30 minutes, then drain and allow them to cool in a cool place for approximately 30 minutes.
Meanwhile, prepare a deep salad bowl.
Slice the red onion into strips and finely chop a small amount of parsley.
Drizzle a small amount of olive oil into a deep bowl.
Peel the potatoes, ensuring they are free of any dirt. Slice them into rings and arrange in the salad bowl.
Season with salt and pepper, and drizzle with a bit of olive oil.
Continue layering the potatoes in this manner, adding seasonings. Finally, incorporate the chopped red onion, mix, and garnish with parsley.
Serve alongside lemon slices and a fish specialty.
