A Simple Tomato Soup Recipe
A simple tomato soup made from frozen and chopped vegetables not only serves as a quick meal option but also significantly reduces your preparation time, making it an ideal choice for busy days. This delightful soup can be prepared effortlessly, allowing you to enjoy a warm and comforting dish without spending hours in the kitchen.
Ingredients
To create this delicious tomato soup, you will need the following ingredients:
Frozen Chopped Vegetables:
These can include a mix of carrots, peas, and bell peppers, which add both flavor and nutrition to the soup. Using frozen vegetables means you can skip the chopping and prep time, making this recipe incredibly convenient.
Canned or Fresh Tomatoes
The base of your soup will be tomatoes, which can be either canned diced tomatoes or fresh tomatoes that have been pureed. The tomatoes provide a rich, tangy flavor that is essential for a good tomato soup.
Fragrant Dill
This herb adds a wonderful aroma and a unique flavor that elevates the soup. Fresh dill is preferable, but dried dill can also be used if fresh is not available.
Small Pasta or Rice
Including small pasta shapes, such as orzo or ditalini, or a handful of rice will make the soup more filling and satisfying. These ingredients absorb the flavors of the broth and add texture to the dish.
Vegetable or Chicken Broth
To enhance the flavor of the soup, use a good quality vegetable or chicken broth as your liquid base. This will provide depth and richness to the overall taste.
Seasonings
Basic seasonings such as salt and pepper, along with optional garlic and onion powder, can be added to taste.
Preparation Steps
1. Combine Ingredients: In a large pot, combine your frozen chopped vegetables, canned or fresh tomatoes, and broth. Stir to mix everything well.
2. Add Pasta or Rice: If you are using small pasta or rice, add it to the pot at this stage. This will allow it to cook thoroughly and absorb the flavors of the soup.
3. Season the Soup: Add the fragrant dill along with your preferred seasonings. Taste and adjust as necessary, ensuring that the flavors are balanced.
4. Cook on Low Heat: Bring the mixture to a gentle simmer over low heat. Allow it to cook for about 20-30 minutes, stirring occasionally. This low and slow method helps to meld the flavors beautifully while ensuring that the vegetables and pasta or rice are cooked to perfection.
5. Serve and Enjoy Once the soup is ready, ladle it into bowls and serve hot. You can garnish it with additional dill or a sprinkle of cheese for an extra touch.
Conclusion
This simple tomato soup recipe is not only quick and straightforward but also incredibly versatile. You can easily customize it by adding your favorite vegetables or adjusting the seasonings to suit your taste preferences. The use of frozen vegetables and pantry staples means that you can whip up this delicious meal at a moment's notice, making it a perfect choice for lunch or dinner on a hectic day. Follow the recipe, and enjoy a hearty bowl of tomato soup that warms both the body and soul.
Ingredients: simple, total time: 60 min. 6-8 servings
400 g frozen mixed vegetables/ diced peas, potatoes, carrots
1. 3 liter of water/ + 200 ml water as needed
1 vegetable or beef cube for soup
100 ml washed rice/ or small pasta for soup
500 ml tomato juice
2 Tbsp weed dill
2 Tbsp finely chopped parsley
salt and pepper to taste
Preparation:
Pour 1300 ml of water into a 4-liter pot and add the frozen vegetables along with the soup cube. Cook over low heat.
Once it reaches a boil, incorporate the tomato juice, dill, and washed rice. Season with salt and pepper to taste, mix thoroughly, and continue cooking until the soup returns to a boil.
If a more diluted broth is desired, gradually add additional water to taste. Given the thickness of my homemade juice, I added approximately 200 ml more water. Adjust the seasoning as necessary.
After the soup reaches a boil, add parsley and cook for an additional 2 minutes before turning off the heat.
Serve the soup warm.
Buon appetito!
NOTE:
Maintain a low heat while cooking the broth.
If a stronger tomato flavor is desired, feel free to add more tomatoes.
If preferred, you may incorporate chicken meat that has been previously marinated in a separate pot, or create small meatballs using minced meat to add to the broth.
The ratio of water to tomatoes should be 4:1.
Store any remaining broth covered in the refrigerator for up to four days.
The soup can be packaged in special containers with lids and frozen for up to two months.
