Ingredients: simple, 35 min. + standing, 3 servings
  • 800 g chicken liver/ cleaned and separated

  • 3 Tbsp Olive oil EVO to taste

  • 1 large onion/ finely chopped

  • 2 cloves of garlic/ minced

  • 80 g butter

  • 120 ml milk

  • 1 tsp mustard

  • 1 tsp dry spice Vegeta

  • salt and pepper to taste

  • 220 ml water/ or as needed

  • 1 Tbsp parsley leaves/ finely chopped - optional

Preparation:

Preparation Chicken liver:

  1. Thoroughly clean the chicken liver and place it in a bowl. Add the milk, mustard, bio dry spice Vegeta, salt, and a touch of pepper. Mix all the ingredients well and refrigerate for approximately 30 minutes.

  2. Meanwhile, prepare the onion and garlic by mincing both.


Frying Chicken liver:

  1. In a pan, heat the oil and butter, then add the onion. Sauté for a few minutes until it becomes soft and golden.

  2. Add the minced garlic and stir briefly.

  3. Remove the liver from the marinade, drain it, and place it in the pan.

  4. Cook over moderate heat for 5-7 minutes on each side. Pour in the marinade and a little water, then let it simmer for 20-25 minutes.

  5. While stewing, stir with a wooden spoon and break up the softened onion to blend with the juices, gradually adding a little water several times.

NOTE:
  • The golden rule is that when you stew any liver and there is still blood, stew it some more, because each liver is a filter that cleans the blood of toxins. By the way, I am not one of those who consumes bloody meat or fish-sushi that has not undergone heat treatment and without blood, it must be well fried! I stick to that rule because it is safer for you that way.

  • Keep the rest of the liver in the refrigerator 2 days. Heat in a pan or microwave.
