Military Beans One of the mythical dishes in Yugoslavia was and remains military beans. Preserved in the memories of those who served military service in the JNA. This famous recipe and the name “military” is precisely because in the original recipe no meat is added. But if possible, you can add it if you want: dried or fresh, sausages, bacon, dried bones from smoked prosciutto or pig's feet. Follow recipe. Ingredients: medium, total time: 3h. 500 g of beans 1 large (red) onion/finely chopped 3 cloves of garlic/finely chopped 1 large carrot/cut into small or smaller cubes 100 g of fat or oil salt, pepper to taste 1 Tablespoon of ground red pepper 1 Tablespoon of dry herb seasoning/Vegeta 2 bay leaves 1 dry pepper soaked in water for 2 hours with laurel 1 Tbsp of fresh parsley leaf/finely chopped 2 roasted hot pepper as addition/ as you like/ optional Preparation: Soak the selected beans in cold water, taking care to ensure that there is enough water so that the beans do not absorb the entire amount of water during swelling and remain dry. Keep the soaked beans in a cool place and let them soak for 1–3 hours. Then drain the water in which the beans were soaked. Put the beans in a suitable container, pour cold water so that they are soaked and cook 30 minutes. After which the water should be drained and then poured with hot water so that it becomes saturated, add half of finely chopped onion and let it cook with occasional addition of hot water. In half of the hot fat, add the rest of the finely chopped onion and carrot, cut into smaller cubes or grated, and fry everything together until it turns slightly brown. When the beans are half cooked, add fried onions and carrots, dried peppers, previously soaked in cold water for 2 hours, and a bay leaf. Heat the remaining fat, add flour and fry until lightly browned. When the flour turns brown, turn off the heat and immediately add the pounded and finely chopped garlic and paprika powder and mix it all well. When the beans are soft, add salt, and pepper and pour the prepared spray into the beans, stirring constantly so that the spray does not clump. Boil the beans with a splash for another 20–30 minutes, after which the heat should be turned off. Taste and, if necessary, add seasoning and finally chopped fresh parsley leaf. Serve warm. Buon appetito! NOTE: It is important to know that the beans should not be mixed when cooking until they are browned, in order not to break the beans and burn them. Ingredients: economic, simple, preparation: 30 min. 4 serving 320 g spaghetti 2 kg mussels in the shell extra virgin olive oil 3 large garlic cloves/ finely chopped 1 sprig chopped parsley 70 ml white wine black pepper to taste Preparation: Rinse the shells well and clean the outside well of impurities. When you are done, put them in a large pot with water, turn on the heat to medium-moderate, cover with a lid and when the mussels have opened, turn them occasionally. Put a layer of tomato purée on the bottom of a fireproof bowl or baking dish, and then sprinkle evenly mixed garlic, onion, salt, pepper, and a spoonful of olive oil over it. Cut the washed eggplant, (if the eggplant is a larger cut, cut it into 4 parts) zucchini and peppers into even and thin rings with a sharp knife and stack them from the edge of the bowl to the end. When you arrange, make sure that each row has a different order of vegetables. Finally, drizzle with olive oil, salt, and pepper and sprinkle with thyme. Cover the mixed vegetables with baking paper and place in a heated oven to bake at 180 °C to 200 °C for about 35 to 40 minutes. In the meantime, cook couscous and serve with ratatouille.
