Ingredients: mold for cake 24cm, very easy to prepare, total time preparing cake 35 min.

For the Bark:

  • 350 g biscuits/ ground

  • 100 g melted butter


For Filling:

  • 170 ml milk

  • 1 sheet of gelatin

  • 500 g Mascarpone cheese

  • 100 g neutral cream /sour cream or Philadelphia

  • 150 g powdered sugar

  • 2 tsp vanilla extract

  • 3 Tbsp instant coffee

  • 250 ml sweet cream/ or whipping cream

  • cinnamon for decoration

Preparation:
  1. Mix the ground biscuits together with the butter.

  2. Coat the dish with this mixture, in which you previously put the baking paper.

  3. Leave it in the fridge for a while to harden.

  4. Make a filling.


Filling:

  1. Pour the milk into the pot and add the gelatin.

  2. Let it sit for 2 minutes to soften. Heat gently while stirring until the gelatin is fully dissolved.

  3. Remove from heat and allow to cool. Add a small amount of neutral cream, sugar, and vanilla. Thoroughly mix the gelatin using a whisk.

  4. Dissolve the coffee in 2 spoons of hot water. Stir until fully dissolved, then let it cool.

  5. Beat the mascarpone with a mixer and combine it with the cooled milk and coffee mixture until smooth.

  6. Spread the cheese mixture over the biscuit base.

  7. Refrigerate for at least 4 hours, or overnight.

  8. Just before serving, whip the sweet sour cream and spread it on top.

  9. Sprinkle with cinnamon.

  10. Chill briefly, then serve.

NOTE:
  • Instead of instant coffee, you can also use sorbetto caffè, to begin with, put about 150 ml, then estimate how much sugar to add, because the coffee sorbetto is already sweetened.

  • If you want an even more frothy cream, add 100 ml of sweet cream

  • Keep the cake covered in the refrigerator for up to 7 days.
