Burnt Cheesecake

  • This Cheesecake is originally from the Basque Country of Spain, it is very easy to prepare and there is not much wisdom in the preparation as well as the ingredients are economical. Follow recipe.

Ingredients: round mold 20-22 cm.
  • 750 of Mascarpone cheese/ Philadelphia or other neutral cheese, room temp.

  • 200 g of sugar

  • 4 eggs/ room temp./ about 220 g

  • 300 ml of heavy cream/ room temp.

  • 1 ampulla vanilla extract/ or vanilla bean/ vanilla sugar 10 g

  • 30 g sifted all-purpose flour

Preparation:
  1. Take a 20 -22 cm round cake tin and place the round baking paper (cut), cover the edges with paper as well that you previously lightly greased (flour and butter).

  2. Preheat oven to 220 °C with fan.

  3. Beat well first the mascarpone, then add sugar and vanilla aroma to combine the ingredients well again.

  4. After that, add one egg at a time and beat at the same time.

  5. Add the sweet cream and mix well again.

  6. Stir in the added sifted flour and beat the component mixture without lumps for about 2 minutes.

  7. Pour over the mixture, level well, shake the mold a little on the work surface.

  8. Bake for about 35–40 minutes at the same temperature.

  9. Check the cake from time to time, especially the last 15 minutes, it should burn on the outside and have a creamy texture on the inside.

  10. Check the cake with a toothpick, if it is partial dry, it is done.

  11. Leave the cake to cool at room temperature. When it has cooled, remove the ring from the mold and put it in the refrigerator to cool for about 8 hours.

  12. Cut the cake into slices and serve!
