For Meatballs:
450 g of minced meat
1/2 medium onion/ finely chopped
1. 5 tsp of salt
1 tsp of black pepper
1 tsp red hot ground pepper
For the Broth:
150 ml cup of washed rice + 2 cups of water/ for cooking the rice 300ml
300 ml of yogurt/ or sour cream
1 large egg
1 tsp of red pepper
1 Tbsp of flour
1 tsp of salt
1 tsp bio dry spice Vegeta
250 ml of instant boiled chickpeas
2–3 cups of water/ to adjust the thickness 750ml
1 tsp of dry mint/ or parsley
Olive oil EVO to taste
grated Parmesan as you like/ optional
Preparation:
Meatballs:
In a large bowl, combine minced meat, finely grated onion, salt, pepper, and hot pepper. Thoroughly knead the mixture and shape it into small meatballs. Cover them and refrigerate for 10-15 minutes to allow them to set.
Rice:
Meanwhile, bring water to a boil in a medium-sized pot. Add the well-rinsed rice and cook on low heat for approximately 15 minutes. Set aside.
Egg and Yogurt Mixture:
In a separate bowl, whisk together yogurt, egg, salt, 1 teaspoon of ground red paprika, and Vegeta seasoning until smooth. Set aside.
Frying Meatballs:
Fry the meatballs in oil until they are golden brown on all sides. Add mint, fry briefly, and then remove from heat.
Transfer the meatballs to a plate, then pour the egg and yogurt mixture into the pan and mix well, that way you'll pick up all the good juices from the meatballs.
Chickpeas:
Drain the chickpeas and rinse with cold water.
Blend the chickpeas with a small amount of water and flour until a creamy mixture is achieved using an immersion blender.
Add the blended chickpeas and the prepared yogurt and egg mixture to the pot with the rice. Add water to achieve the desired consistency and allow to simmer on low heat.
Finally, you may add the meatballs and adjust the seasoning (salt, black pepper), cooking for an additional 2-3 minutes, or serve the meatballs separately as preferred.
Garnish the dish with chopped parsley, turn off the heat.
Serve warm in plates with meatballs, you can sprinkle with a little grated Parmesan.

NOTE:
Soak dry chickpeas for a minimum of 8 hours (preferably overnight) to minimize cooking time and enhance digestibility. Discard the soaking water and replace it with fresh water.
After soaking, dried chickpeas generally require 45-90 minutes to cook on the stovetop. If unsoaked, the cooking time extends to 1.5 - 2 hours. In an Instant Pot, unsoaked chickpeas cook in 35-50 minutes, while soaked chickpeas take 12-15 minutes. They are ready when they are tender, creamy, and easily mashed.
As an alternative to minced meat and small meatballs, Carnioli sausages sliced into rings can be used or bacon.
From vegetables, you can add on finished Potage boiled carrots, potatoes and fried spring onions in a little oil.
You can also add a little cumin as a spice.
Store the potage covered in the refrigerator.
The next day, this Potage will be thick, it will look like risotto, certainly a tasty, you can add a little liquid or leave it as is, heat over low heat while stirring. This is light lunch for those who want to lose weight faster.
