Ingredients: simple, total time: 65 , 24 rolls

Biscuit:

  • 4 eggs

  • 8 Tbsp granulated sugar

  • 1 bag vanilla sugar/10g

  • 8 Tbsp flour

  • 1 bag baking powder


Filling:

  • 150 g cooking chocolate

  • 4 Tbsp apricot jam/ or strawberry or any

  • 1 tsp rum extract/ or vanilla extract optional


Topping:

  • 150 g cooking chocolate/ or milk chocolate

  • 100 g soft butter

  • 4 Tbsp granulated sugar

  • 3 Tbsp cocoa powder

  • 300 ml milk


and more:

  • 150 g shreded coconut

Preparation:

Sponge cake:

  1. Using a mixer, beat the eggs, sugar, and vanilla sugar until the mixture becomes foamy. Gradually incorporate the flour combined with baking powder.

  2. Prepare an oven tray by lining it with slightly damp baking paper.

  3. Evenly pour the mixture onto the tray and level it, gently tapping to eliminate any air bubbles.

  4. Bake in a preheated oven at 190°C for approximately 12 minutes.

  5. Allow the biscuit to cool for a few minutes before turning it over and carefully removing the baking paper. Set it aside.


Filling:

  1. Gently melt the chocolate and jam over low-medium heat, stirring continuously. Once the mixture is smooth and uniform, remove it from the heat and incorporate the rum by stirring thoroughly.

  2. Allow the filling to cool slightly for approximately 2 minutes, then spread it evenly across the entire biscuit.

  3. Divide the sponge cake into 24 equal strips (6x4). If your oven tray is smaller than standard, reduce the number of strips to 20 (5x4).

  4. Roll each strip into smaller rolls, ensuring they are well connected, and arrange them on a large decorative tray.

    1. In a small saucepan, combine the chopped chocolate, softened butter, and sugar. Stir over low-medium heat, then add the cocoa powder and milk, mixing until thoroughly combined. Remove from heat just before the mixture begins to boil, and allow it to cool for approximately 15-20 minutes.

    2. Submerge each roll in the mixture, ensuring it is well-drained on a wire rack before coating all sides with coconut.

    3. Place the coated rolls on a decorative platter and refrigerate for 1-2 hours before serving.
