Ingredients You Will Need
To bring this delicious cherry cake to life, gather the following ingredients:
Fresh Cherries: The star of the cake, providing a sweet and slightly tart flavor that complements the cocoa beautifully. You can use either pitted fresh cherries or even canned cherries if fresh ones are not available.
Eggs: Essential for binding the ingredients together, eggs also add moisture and richness to the cake.
Sugar: Regular granulated sugar will sweeten the cake, balancing the tartness of the cherries.
Vanilla Sugar: This adds an aromatic sweetness that enhances the overall flavor profile of the cake.
Vanilla Flavoring or Grated Lemon: You can choose to use vanilla flavoring for a classic taste or opt for grated lemon zest for a refreshing citrus twist.
A Little Oil: A small amount of oil is used to keep the cake moist and tender.
Yogurt: This ingredient not only contributes to the cake's moisture but also adds a subtle tang that complements the sweetness.
Cocoa Powder: Essential for creating the darker mixture, cocoa powder adds depth of flavor and a rich color to the cake.
Flour: All-purpose flour is the base of the cake, providing structure and stability.
Baking Powder: This leavening agent ensures that the cake rises beautifully, resulting in a light and fluffy texture.
Quick and Easy Preparation
The preparation of this cake is incredibly quick and straightforward, making it the perfect dessert for any occasion, whether it be a family gathering, a birthday celebration, or simply a sweet treat to enjoy at home. Here’s how you can make it:
1. Preheat Your Oven: Start by preheating your oven to the appropriate temperature, usually around 350°F (175°C), to ensure that the cake bakes evenly.
2. Prepare the Cherry Mixture: If using fresh cherries, wash and pit them, then chop them into halves or quarters. Set them aside to incorporate later.
3. Make the Batters: In a mixing bowl, combine the dry ingredients, including flour, sugar, cocoa powder, and baking powder. In a separate bowl, whisk together the wet ingredients, which include eggs, yogurt, oil, and your choice of vanilla or lemon flavoring. Gradually mix the wet ingredients into the dry mixture until well combined. Divide the batter into two portions, leaving one half plain and adding cocoa to the other half to create the darker mixture.
4. Layering the Batter: In a greased baking pan, alternate spoonfuls of the lighter and darker batters, creating a marbled effect. Add the chopped cherries on top, gently pressing them into the batter.
5. Bake: Place the cake in the preheated oven and bake it for approximately 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
6. Cool and Serve: Once baked, allow the cake to cool in the pan for a few minutes before transferring it to a wire rack. Once cooled, slice and serve to enjoy the delightful flavors and stunning presentation.

Preparation:
Whisk the eggs with sugar until the mixture becomes foamy. Incorporate the oil, a pinch of salt, vanilla sugar, vanilla essence, oil, and yogurt, then mix briefly once more.
Gradually incorporate the flour combined with baking powder, mixing until thoroughly blended.
Set aside 300 ml of the light mixture in a separate bowl.
Add a tablespoon of cocoa to the remaining mixture, stirring until uniform.
Prepare a 23x38 cm baking dish by greasing it with butter and dusting with flour, removing any excess.

Once cooled, dust the cake with powdered sugar or decorate with whipped cream and grated chocolate.
Cut the cake into cubes and serve.
Buon appetito!
NOTE:
If you don't have cherries, you can use the same amount of raspberries or 2 apples cut into thin cubes.
