Kurtosh-Chimney cake Hungarian Dessert



  • I have had the pleasure of indulging in this delightful cake or dessert on multiple occasions during my visits to Budapest, and I can confidently say that the experience is nothing short of fantastic. Each bite offers a unique blend of flavors and textures that is truly memorable. The cake itself is often moist and rich, providing a perfect base for the various toppings and coatings that can enhance its taste.


    One of the most appealing aspects of this dessert is the versatility it offers. You can choose to roll it in a variety of delicious coatings, each contributing its own distinct flavor profile.   • The cake is a fantasy and easy to prepare!

Ingredients: medium, total time:

Dough:

  • 1 sachet of dry yeast

  • 250 ml of lukewarm milk

  • 3 Tablespoons sugar

  • 50 g margarine

  • 2 eggs

  • 3 sachets of vanilla sugar, 30 g

  • 700 g of flour


Syrup:

  • 200 g of sugar

  • 70 ml of water


For sprinkling:

  • Cinnamon

  • Vanilla sugar

  • Coconut flour

  • Ground walnuts

  • 6 cans lined with aluminum foil


Preparation:
  1. Add sugar, yeast and a spoonful of flour to the warm milk.

  2. Set aside for the yeast to rise.

  3. Mix margarine and eggs, add vanilla sugar and yeast and knead the dough with the gradual addition of flour, so that a firm dough is obtained.

  4. Leave for about 1 hour to come.

  5. Roll out the dough to about 5 mm thick and cut strips 2 cm wide. Wrap the strips around the can (which you previously lined with aluminum foil) so that the strips overlap.

  6. Arrange the cans upright on a baking sheet (you can coat the dough with egg yolk if you wish) and bake at 180 °C for about 15 minutes.

  7. Allow to cool slightly and then remove from the cans.

  8. Cook the syrup by putting sugar and water to boil for 4 minutes and coat each cake with it and roll in walnuts, coconut or cinnamon and vanilla sugar.

  9. Serve.


2nd Recipe Kurtosh or Chimney Cake

  • It is the same procedure as first recipe!

Ingredients:

Dough

  • 600 g of flour

  • 60 g of sugar

  • 60 g of melted butter+ 40 g for spreading!

  • 25 g of yeast

  • 300 ml of milk

  • 2 eggs + 1 yolk

  • 1 pinch of salt


For the Topping:

  • 1 egg white/ for spreading

  • granulated sugar to taste (to taste)

  • 2 pieces of vanilla sugar

  • nuts to taste

  • hazelnuts to taste

  • cinnamon to taste

  • cocoa to taste

  • coconut to taste


also you need:

  • baking molds as needed (3 rolls of rolling pin and paper towels)

  • Baking paper as needed



  • The technique of preparing this cake is the same as the first recipe, only the ingredients are different.
