A wonderfully healthy stew of lentils and vegetables is an excellent choice for any time of day, whether it’s for a hearty lunch or a comforting dinner. This nutritious dish is packed with an abundance of vitamins and minerals, making it an essential part of a balanced diet. The combination of lentils and various vegetables not only provides a rich source of protein and fiber but also contributes to our overall well-being. Each ingredient plays a vital role in delivering essential nutrients that help our bodies function optimally, and it is this meal that can significantly enhance our health and vitality.
Ingredients Required
To create this delicious and nourishing stew, you will need the following ingredients:
- **Lentils**: These tiny powerhouses are the star of the dish, offering a great source of plant-based protein, fiber, and essential nutrients like iron and folate. They come in various types, such as green, brown, or red lentils, each bringing its unique flavor and texture to the stew.
- **Onion**: Onions add a depth of flavor and sweetness to the stew. They are also rich in antioxidants and have anti-inflammatory properties that can support heart health.
- **Garlic**: Known for its distinct aroma and flavor, garlic not only enhances the taste of the stew but also provides numerous health benefits, including boosting the immune system and reducing blood pressure.
- **Tomatoes or Tomato Passata Sauce**: Fresh tomatoes or a smooth tomato passata can be used to add acidity and richness to the stew. Tomatoes are an excellent source of vitamin C and lycopene, a powerful antioxidant known for its heart-protective qualities.
- **Spinach**: This leafy green is packed with vitamins A, C, and K, as well as iron and calcium. Adding spinach to the stew increases its nutritional value and contributes to a vibrant color.
- **Potatoes**: Potatoes add heartiness to the dish, making it more filling. They are a good source of carbohydrates and provide essential vitamins and minerals, including potassium and vitamin B6.
- **Carrots**: Carrots bring natural sweetness and a vibrant orange hue to the stew, along with beta-carotene, which our bodies convert into vitamin A, supporting eye health and immune function.
- **Broth**: A flavorful broth, whether vegetable or chicken, serves as the base for the stew, infusing it with additional taste and nutrients.
- **Salt and Pepper**: These basic seasonings are essential for enhancing the flavors of the ingredients. Adjusting the seasoning to taste will ensure that the stew is perfectly balanced.
- **Oil**: A drizzle of olive oil or your preferred cooking oil is necessary for sautéing the onions and garlic, adding richness and healthy fats to the dish.
- **Parmesan**: Grated Parmesan cheese can be added just before serving to introduce a savory, umami flavor that complements the stew beautifully.
- **Parsley (if desired)**: Fresh parsley can be used as a garnish, adding a pop of color and a fresh, herbal note that brightens the overall flavor profile of the stew.
Preparation and Cooking
To prepare this delightful stew, start by rinsing the lentils thoroughly and setting them aside. In a large pot, heat the oil over medium heat and sauté the chopped onions until they become translucent. Add minced garlic and cook for an additional minute until fragrant. Next, incorporate diced carrots and potatoes, stirring them into the mixture to allow them to soften slightly.
Once the vegetables have begun to soften, add the lentils and pour in the broth, followed by the tomatoes or tomato passata. Bring the mixture to a gentle simmer, allowing the flavors to meld together. After about 20 minutes, add the spinach and season with salt and pepper to taste. Continue to simmer until the lentils and vegetables are tender, ensuring that the stew remains hearty and satisfying.
Conclusion
Finally, serve the stew hot, garnished with grated Parmesan and a sprinkle of fresh parsley if desired. This wholesome stew not only warms the body but also nourishes the soul, making it a perfect meal for any day of the week. Enjoy the comforting flavors and the health benefits that come with every spoonful!
Ingredients: simple, total time: 70 min., 4 servings
400 g of lentils
1 medium onion
3 cloves of garlic
2 large carrot/ chopped into small cubes
1 large potato/ diced into small cubes
2 large tomatoes/ chopped, or 2 full Tbsp of tomato purée or 100 ml tomato passata sauce
2 cubes of frozen spinach/ 100 g or fresh, washed
1 teaspoon of cumin
Salt and pepper to taste
3 Tbsp of olive oil EVO
500 ml of broth/ or water
Finely chopped parsley and Parmesan as desired
Preparation
Lentils:
When using red lentils, pre-soaking is not required. For green lentils, you may soak them for 1-2 hours before rinsing thoroughly. I opted for pre-cooked lentils from a can, rinsing them under cold water, which significantly expedited the cooking process.
Preparation Stew:
Begin by heating the oil in a large pan. Add the finely chopped onion and sauté until it becomes translucent.
Next, incorporate the chopped carrots and potatoes. Sauté for 10 minutes, stirring occasionally, and cover the pan. A non-stick, deeper pan is recommended to prevent sticking.
Once the vegetables have softened slightly, add the chopped tomatoes (or tomato puree) and continue to cook for another 10 minutes with the pan covered.
Add the lentils, spinach, cumin (if desired), salt, and pepper to the pot. Pour in water or vegetable stock, approximately 250 ml.
Cook uncovered over a low-medium heat until the lentils are tender, about 30 minutes, stirring occasionally and adding additional water or broth as necessary.
Once the liquid has reduced by half and the mixture has thickened, add the minced garlic. Continue cooking for an additional 5-10 minutes.
Serve warm, garnished with chopped parsley and a drizzle of olive oil, if desired.
Optionally, you may add 1–2 tablespoons of Parmesan cheese.
Buon appetito!
"May your kitchen always be filled with wonderful aromas, your table with good food, and your heart with the joy of sharing." ☕❤️🌹
NOTE:
To enhance the dish with a hearty element, consider incorporating Carniolan sausages or diced bacon, and increase the quantities of tomatoes and broth accordingly.
If desired, a teaspoon of ground pepper can be added.
When incorporating grated Parmesan cheese, ensure it is not overly salty, and accordingly, reduce the salt content in the dish.
Store any leftovers in the refrigerator for 2–3 days.
