##Mediterranean Baked Giant Beans: A Flavorful Comfort Dish

  • Gigante white beans are prepared in a Mediterranean style with a rich tomato sauce, baked in the oven. This vegan and healthy dish, free from meat, is perfect even for summer preparation. The recipe requires gigante white beans, onion, garlic, tomatoes, tomato concentrate, carrots, oregano, fresh parsley, and common household spices. The preparation is straightforward, resulting in a delicious dish. Beans prepared in this way can serve as accompaniment to other dishes. Follow the recipe for best results.

Ingredients: simple, total time: 90 min., 4 servings
  • 800 g dried giant white beans

  • 350 g crushed tomatoes

  • 1 Tbsp tomato concentrate + 130 ml water

  • 100 ml olive oil

  • 2 medium onions/ finely chopped

  • 3 cloves garlic/ minced

  • 2 carrots/ diced

  • 2 tsp dried oregano

  • 2 tsp red ground paprika

  • salt and black pepper

  • about 250 ml water/ gradually

  • 2 Tbsp parsley leaves/ finely chopped for garnish

  • 2 - 3 Carnioli sausages/ or for for grill as you like

  • terracotta dish/ or other deep baking dish

Preparation:
  1. Soak the giant beans overnight in plenty of water.

  2. Drain and cook in fresh water for about 45 minutes. (If you're using canned beans, skip this step, just drain and rinse.)

  3. Heat the olive oil in a pan and sauté the first onion, until softened add garlic and chopped carrots and stir well. Sauté them for about 5 minutes.

  4. Now add the chopped tomatoes and spices( salt, black, pepper, ground paprika and oregano).

  5. Simmer the sauce for 10-15 minutes to low moderate heat.

  6. Mix the tomato concentrate with 100 ml of water, add to the ingredients and mix.

  7. Gradually add water and cook for another 20-25 minutes, stirring occasionally.

  8. The tomatoes must soften and the ingredients must be combined. Put out the fire.

  9. Combine the cooked beans with the tomato sauce in a baking dish and level it. If you have a terracotta dish, you can also use it.

  10. If you want, you can add sausages from above. I used Carniola sausages and made a few cuts on each one.

  11. Bake at 190°C for about 40-45 minutes until thick and rich.

  12. Garnish with chopped parsley before serving.

NOTE:
  • If you use beans from a can, your dish will be faster, almost in about an hour of cooking time. Rinse the beans well under running cold water before use.

  • If you like spicy, you can add hot chili peppers or hot green pepper.

  • Keep the rest of the food covered in the refrigerator for up to 2 days. Heat in a pan or microwave.
