  • Eggs: These provide structure and richness to the dough.

  • Flour: All-purpose flour is typically used to create a light and fluffy texture.

  • Baking Powder: This leavening agent helps the dough rise, giving it a soft and airy quality.

  • Vanilla: A splash of vanilla extract adds a warm and inviting flavor.

  • Sugar: Granulated sugar sweetens the dough, balancing the flavors.

  • Oil: A neutral oil, such as vegetable or canola oil, contributes to the dough's moisture.

  • Milk: A small amount of milk helps to bring the dough together and adds tenderness.

Filling Options
  • For the filling, you have the option to use either homemade or store-bought jam, which can vary in flavor to suit your preferences. Popular choices include apricot, raspberry, or traditional peach jam. To enhance the flavor profile, you can mix the jam with a splash of rum or orange juice, adding a delightful twist that complements the sweetness of the fruit filling. This combination not only enhances the taste but also adds a touch of sophistication to the dessert.

Coloring the Dough
  • In addition to the ingredients mentioned, you will also need yellow and red food coloring to achieve that authentic peach hue. By carefully mixing these colors into the dough, you can create a realistic appearance that mimics the natural gradient of a ripe peach. The vibrant colors will make these desserts stand out, making them not just a treat for the palate but also a feast for the eyes.

Preparation:

Dough:

  1. In a large bowl, begin by beating the eggs with sugar until they are foamy. Gradually add each ingredient listed in the description, mixing briefly after each addition.

  2. Slowly incorporate the flour, initially using a whisk and then transitioning to manual mixing, until a smooth dough is formed.

  3. Once the dough is smooth, shape it into a small rectangle, knead slightly with your palm, and cover with plastic wrap.

  4. Refrigerate the dough for 30 minutes.

  5. After chilling, roll out the dough with a rolling pin to the thickness of your thumb, ensuring the edges are straight.

  6. Using a sharp knife, cut the dough into smaller 1 cm cubes.

  7. Shape each cube into a ball and place them on a baking tray lined with parchment paper, ensuring there is space between each ball.

  8. Bake the prepared balls in the oven at 150°C for approximately 15 minutes.

  9. While the first batch is baking, continue forming balls with the remaining dough.

  10. Once baked, create a small indentation in each ball and collect any excess crumbs in a bowl.

Making Filling:

  1. Combine rum (or orange juice) and homemade jam with the excess crumbs, mixing thoroughly until the mixture is uniform.

  2. Fill the hollow part of each ball and assemble them into a sandwich shape. Set them aside.

  3. Pour 150 ml of water into two separate bowls, adding red food coloring to one and yellow to the other, then mix each thoroughly.

  4. Add lemon extract to the yellow mixture and mix well.

  5. Roll the balls completely in the yellow mixture, then dip only the tops into the red mixture.

  6. Place the coated balls on baking paper in a large tray. Repeat this process until all are coated.

  7. Once all the balls are prepared, pour granulated sugar into a small bowl. Roll each ball in the sugar, then arrange them on a decorative tray.
