Ingredients: simple, total time: 55 min.
1 pack circle puff pastry
2 eggplants
salt and pepper to taste
Olive oil EVO to taste
breadcrumbs
160 g grated melted cheese / Mozzarella, Gouda..
50 g grated Parmesan cheese
basil leaves for decoration
Preparation:
First, prepare the eggplant vegetable by washing it well and cleaning it, then cut it into thin slices.
Line a tray with baking paper.
Sprinkle a little breadcrumbs on the tray where you will arrange the eggplants next to each other.
Season the eggplant with a little salt, black pepper a little oil to taste.
Bake in the oven at 180 °C for about 25-30 minutes.
Leave the finished eggplant together with the tray to cool.
Roll out the finished puff pastry with a rolling pin on the work surface, making sure it is the size of your mold.
Transfer the dough to the mold along with the baking paper, and shape the dough around the mold including the edges.
Prick the dough in a few places with a fork, in this way, by poking, you will prevent the dough from puffing up.
Brush the edges of the dough with olive oil and start layering the eggplant and cheese. Insert a fresh basil leaf between each row. If you don't have any, you can sprinkle with dry basil seasoning.
At the end, sprinkle with grated Parmesan and sprinkle with a little olive oil.
Bake the pie at the same temperature for about 20 minutes, until the surface becomes golden brown.
Leave the pie to cool slightly, then serve in slices.
