Healthy and tasty pumpkin purée, that you can serve with any meat or fish, can be used for soups or stews. It is easy to prepare and ready quickly. Follow recipe.
Ingredients: very easy, total time:35 min., 4 servings
1 pumpkin / cleaned, cut into larger pieces
2-3 Tbsp olive oil
1/2 teaspoon salt
pepper to taste
15 g butter
Preparation:
Peel a squash, grate it and cut it into large pieces. Put it in a pan and pour a little olive oil over it, add salt and pepper to taste. Put in a preheated oven, bake at 200 °C for 20 minutes.
When the pumpkin has softened, take it out and let it stand for about 10–15 minutes, then work the pumpkin with a blender and add a little butter, so that you get a nice purée mixture.
You can serve this kind of purée with meat and fish dishes, toast, or as a leftover you can use it for soup, risotto, or pasta.
