Beef and Vegetable stew
Hearty Beef and Vegetable Stew Recipe
Today I decided to share with you a fantastic traditional Serbian dish that hails from the picturesque region of southern Serbia. This hearty meal is perfect for a rich family lunch, bringing warmth and comfort to the dining table. The stew is not only delicious but also embodies the essence of Serbian culinary traditions, making it a beloved choice for gatherings and special occasions.
Ingredients
For the meat component of this robust stew, I opted for young beef, which is renowned for its tender texture and rich flavor. Young beef is particularly desirable because it melts in your mouth, offering a delightful eating experience. However, you have the flexibility to use other meats according to your preference or dietary restrictions. Lamb and pork are excellent alternatives, each bringing their unique flavors to the dish. My fondness for young beef comes from its buttery softness, which enhances the overall richness of the stew.
To create this delectable dish, you will require various ingredients. For the base, you will need some bacon to add a smoky depth and richness, along with chunks of beef that will become tender as they cook. A bit of flour is essential for thickening the stew, while a drizzle of oil helps sauté the ingredients to perfection. Beef broth serves as the foundation of the stew, infusing it with a deep, savory flavor that ties all the components together.
When it comes to vegetables, the recipe calls for a colorful assortment that adds nutrition and enhances the visual appeal of the dish. You will need onions, which provide a sweet and aromatic base; carrots, which add a touch of sweetness and vibrant color; bell peppers for a fresh crunch; potatoes that contribute heartiness; and celery, which brings a wonderful earthiness to the mix. To elevate the flavor profile even further, Italian passata sauce is incorporated, adding a rich tomato essence that complements the meat beautifully.
Seasoning is key to achieving the perfect balance of flavors in this stew. Classic salt and pepper are essential for enhancing the natural tastes of the ingredients. Additionally, herbal spices such as thyme and bay leaf are used to impart a fragrant aroma and depth of flavor that will make your kitchen smell divine as the stew cooks. These herbs are staples in many traditional dishes and are particularly well-suited for hearty meals like this one.
Preparation
The cooking process is straightforward yet rewarding. On the stovetop, the stew takes approximately 55 minutes to simmer, allowing the flavors to meld together beautifully. If you choose to finish it in the oven, it will take about 1 hour and 45 minutes, resulting in an even richer flavor as the ingredients continue to develop in the gentle heat. Prior to cooking, you can expect to spend about 25 minutes preparing all the ingredients, chopping vegetables, and measuring out spices, which is a small investment for such a fulfilling meal.
About Stew
Interestingly, some people in the southern regions of Serbia enjoy preparing this dish with an added twist by incorporating cabbage. This variation not only enhances the nutritional value but also contributes a unique flavor profile that many find irresistible. The combination of tender beef, hearty vegetables, and the slight acidity of cabbage creates a symphony of tastes that is sure to please any palate.
Conclusion
Once you experience the comforting warmth of this hearty beef and vegetable stew, I have no doubt that it will become a staple in your household. The blend of flavors and textures, combined with the ease of preparation, makes it an ideal choice for family meals or gatherings with friends. I encourage you to try this recipe and savor the delightful experience it brings. Happy cooking!

Tools:
deep Dutch oven dish
large wok pan
large skillet
Preparation:
Prepare all the ingredients as described above.
Preparation meat and Bacon:
In a wok pan, fry the bacon over low to moderate heat until it reaches a golden brown color. Using a slotted spoon, transfer the bacon to a plate lined with paper towels to absorb the excess fat.
Season the cubed beef with salt and pepper to taste, then coat it in flour, shaking off any excess.
In the same pan, fry the beef in the bacon fat until it is browned on all sides. Cook in batches to ensure a proper sear, adding a little oil as necessary during the process.
Return the remaining meat to the same pan, add the red wine, and use a wooden spoon to scrape the bottom of the pan to capture all the flavors. Cook until the alcohol evaporates, approximately 7-10 minutes, then add the whole and halved cleaned mushrooms.
Continue cooking until the mushrooms release their liquid and soften, about 10-15 minutes. Turn off the heat.
Frying Vegetables:
In a separate, larger pan, while the meat is simmering, heat the oil over low to moderate heat. Add the chopped onion and cook until softened, approximately 5-7 minutes.
Incorporate the chopped carrot, celery, and paprika and allow it to simmer for about 10-12 minutes.
Following the allotted time, add the chopped garlic, sauté for about 10 seconds, and then introduce the tomato sauce; mix the ingredients well and immediately remove from the heat.
Combine Ingredients:
Transfer all the vegetables with the sauce into a terracotta dish, then add the meat, mushrooms, new potatoes, and bacon. Season to taste, adding thyme and a bay leaf, and mix thoroughly. Pour the beef broth over the mixture, stir once more, and cover.
Baking:
Preheat the oven to 170°C and bake for approximately 1 hour and 30 minutes.
After 70 minutes of baking, remove the lid and continue baking until the time is complete.
Buon appetito!

NOTE:
This recipe calls for young veal meat with minimal fat; however, it can be substituted with beef that has fewer veins and less fat.
Instead of new potatoes, regular or red potatoes can be used.
If you like the taste of paprika, feel free to add 1-2 more.
For those who enjoy a spicy flavor, consider adding mildly hot green pepper, whole chili pepper, or crushed hot peppers.
You can also prepare this dish on the stove, cooking on low heat for about 1 and a half hours, covered.
Store any leftovers covered in the refrigerator for up to 3-4 days.
Reheat using a saucepan or microwave, add a little water as needed.
