  • To prepare this wonderful dish, start by bringing a pot of salted water to a boil. Once boiling, add the fresh egg tagliatelle and cook according to the package instructions, usually just a few minutes until al dente. While the pasta is cooking, you can prepare the sauce.


    In a separate pan, gently heat a tablespoon of olive oil or butter over medium heat. Add the low-fat spreadable cheese, stirring until it begins to melt and become creamy. Squeeze in the juice of the lemon and add the zest for that refreshing citrus flavor. Stir in the smoked salmon fillets, allowing them to warm through and infuse the sauce with their smoky essence.


    Once the pasta is cooked, drain it and reserve a small cup of the pasta water. Add the drained tagliatelle to the pan with the cheese and salmon mixture. Toss everything together, adding a splash of the reserved pasta water if needed to achieve your desired sauce consistency. Season with salt and pepper to taste.


    Finally, serve the pasta hot, garnished with chopped parsley for a touch of freshness. Ingredients: simple, total time: 15 min., 2 servings

  • 280 g egg tagliatelle fresh

  • 200 g smoked salmon

  • 160 g spreadable cheese light/ Philadelphia

  • 2 Tbsp Olive oil EVO/ or 20 g butter

  • 1 grated lemon zest + juice

  • 130 ml liquid from pasta

  • 2 Tbsp parsley/ finely chopped

  • salt and pepper to taste

Preparation:
  1. Prepare a pot of water for the tagliatelle and add a teaspoon of salt. Cook over medium heat.

  2. While waiting for the water to boil, thoroughly wash the lemon and grate the zest. Squeeze the lemon juice and set it aside.

  3. Finely chop the salmon into small pieces, similar in size to chopped parsley.


Preparation Lemon Sauce:

  1. Introduce olive oil or butter to a large pan and allow it to heat thoroughly over low-medium heat.

  2. Incorporate lemon juice and let it simmer over low-medium heat for approximately 3-4 minutes.

  3. Simultaneously, cook the tagliatelle in boiling water for about 3-4 minutes.

  4. Set aside one cup (150 ml) of the tagliatelle cooking water, then drain the pasta thoroughly.

  5. Add the chopped salmon fillet and stir-fry for roughly 3-4 minutes until it achieves a golden brown color.

  6. Introduce the spreadable cheese and blend well for 30 seconds.

  7. Immediately add the reserved liquids and cook for a few minutes.

  8. Once the mixture thickens slightly, reduce the heat and season with salt, pepper, and lemon zest to taste (I used 1 spoon). Mix swiftly, promptly add the tagliatelle, and combine everything well for about 1 minute. Garnish with chopped parsley.

  9. Serve immediately while warm.
