    Risotto with Mussels My recipe is fantastic with mussels. Risotto taste of Mediterranean and shellfish. It is easy to prepare and ready quickly. Try to make it the same as me. Follow recipe. Ingredients: simple, total time: 45 min. 4 serving 500 g mussels 30 g butter 1 onion/ finely chopped 2 clove garlic/ crashed 70 ml white wine handful parsley leaves 1 tsp for water for mussels 4 Tbsp Olive oil EVO 1 lemon slice 1.5 cup rice/ cup is 200 ml broth 3:1 rice 4.5 cups of broth /200 ml/cup 100 g Parmesan cheese salt and pepper to taste, control it. Preparation: Wash seashells in cold water. Put in the deep pot a water, add 1 tsp. Salt and wait for it to boil, then put the mussels in boiling water to mussels open. Take out the mussels one by one, carefully shake all the meat from the mussels on a plate. Put 2 tbsp. Olive oil in a pan and fry the mussels, add 30 g of butter and 2 crushed garlic. (then throw it), squeeze a little lemon juice and simmer a little 70 ml white wine for 5 minutes until the alcohol evaporates and put out the fire. Put 2 tablespoons of olive oil in a special pot and put finely chopped onion, add 1,5 cups of rice, salt and pepper, add broth 3: 1. Chop the garlic into small pieces. Take a deeper pan, pour very little olive oil. When it warms up, put the mushrooms to simmer. As soon as the water evaporates from the mushrooms add dry Porcine, garlic, butter, season with salt and pepper and finely put the chopped parsley, stir well and set aside. Meanwhile, prepare the béchamel sauce (see my recipe for sauces) When you have done the béchamel, prepare the macaroni and cook them. Prepare the pan for the bacon, which you will fry briefly for about 5-7 min. When everything is finished take a refractory bowl with a deeper size of 35 × 40 cm, put a spoon (spread): 2. Parmesan grated, then put 3. Bacon and arrange 4. Macaroni and 5. Mushrooms and so on, all in the same order until the end of the material. Make sure that the end with the pasta ends :) . Sprinkle the rest of the béchamel in a bowl, shake a little so that the béchamel goes into all the material. Mix well with your hands until integrated. Add vanilla extract (or rum) and mix again. Finally, add milk and mix vigorously until you get a semi-hard, thick mixture. Divide into 4 equal parts. Put yolks in the smaller pot, add sugar, and mix with a hand-mixer until egg yolks become light yellow. Hold the pot with the other hand the best you can, making sure: 1. Mix everything, and be careful not to flip the pots over and burn yourself. (This part is crucial as you’re processing the egg yolks.) Add butter to the pot, and continue mixing. Once the mixture is completely smooth (3-4 minutes), remove off heat. Combining: Place a piece of baking paper on a working area and sprinkle with confectioner’s sugar. Take one chocolate layer and spread it out into a rectangle with a rolling pin until it’s the thickness of a finger (approximately). Take 1/4 of the yellow layer and spread over the top evenly. Roll the cake in, starting with the longer end. Cover in baking paper and leave in the fridge or freezer, depending on when you plan to consume it. Repeat steps for the remaining 3 rolls. Before serving, cut each roll into 2.5 cm pieces. Ingredients: simple, total time: 110 min 1 Tbsp olive oil 1 onion/ finely chopped 2 clove garlic/ crushed 900 g orange gold pumpkin peeled/ cut into 1.5 cm cubes 2 × 400 g cans brown lentils rinsed/ drained 1/2 cup vegetables stock 690 g bottle of tomato paste 500 g ricotta good pinch ground nutmeg 375 g packet fresh for lasagna 120 g packet baby spinach /trimmed finely shredded 1 and 1/2 cup tomato paste + tasty cheddar rocket leaves to serve Preparation: Preheat oven to 190 °C. Grease 26 × 20 × 6 baking dish. Heat the oil in a large saucepan over medium heat. Cook the onion about 5 min., until soft and lightly browned. Add the garlic and cook 1 min. Add pumpkin, lentils, and stock and stir well. Reserve one cup of the paste and stir the remaining paste in the pumpkin mixture. Cover and bring to boil, reduce heat slightly and cook covered for 20 min. or until pumpkin is tender and the mixture is thick, transfer to a large bowl to cool slightly, then refrigerate until cold. Meanwhile, use a fork to mash ricotta in a bowl. Stir in nutmeg. Season. Line the base of the prepared dish with a layer of lasagna sheets. Spread over half of the pumpkin mixture, then top with another layer of lasagna sheets. Sprinkle with ricotta mixture and use damp fingertips to spread evenly. Cover this last layer with slices of smoked scamorza cheese and spread a new layer of béchamel over it; continue like this until at least 3 layers have been created. In addition, put a few cubes of butter on the surface of the lasagna in random order to allow the superficial part of the lasagna to cook without becoming too dry. When you have also finished the surface layer, place the pan with the lasagna in the preheated oven at 180 °C for about 25 min. Ingredients: Almond Cake: 1/2 cup + 4 Tbsp sugar 1 and 1/2 cups almond flour / meal 4 Tbsp all-purpose flour 5 large eggs 1 tsp vanilla extract 2 Tbsp butter/ melted 3 large egg whites Coffee Syrup: 2/3 cup of sugar 2/3 cup water 1 1/2 Tbsp instant coffee 1/4 cup coffee liquor or dark rum or brewed coffee 2 tsp vanilla extract Chocolate Ganache or Sauce: Coffee buttercream frosting 1/2 cup (1 stick) unsalted butter, very soft 1 cup powdered sugar 2 Tbsp milk 2 Tbsp instant coffee Spoon & Sweep method: Use a spoon to fill a measuring cup with flour until the required amount is obtained. Scooping the measuring cup directly into the flour bag will firmly pack flour, resulting in too much flour required for recipe. Preparation: Preheat oven 200 °C. Line an 28 × 44 cm jelly roll pan with parchment paper and set aside In a stand mixer with whip attachment, whip together 1/2 cup sugar, almond flour, flour, 3 eggs and vanilla extract. Whip on high for 5 minutes. Add one egg and whip for another 3 minutes, add the last egg and whip another 3 minutes. Pour mixture into another large bowl. Clean mixing bowl and whip attachment for next step. Whip 3 egg whites and 4 tablespoons sugar to medium (not stiff) peaks and set aside. Add melted butter to almond mixture, and then fold whipped egg whites delicately into almond mixture. Use an offset metal spatula to spread mixture onto parchment lined pan. Bake approximately 11–12 minutes, or until the center of cake bounces back when lightly pressed. For coffee syrup, bring 2/3 cup sugar and 2/3 cup water to boil. Remove from heat and add 1 and 1/2 tablespoons instant coffee. Let instant coffee cool, then add coffee liquor (or rum or brewed coffee) and 2 teaspoons vanilla. Prepare ganache and set aside. Prepare coffee buttercream by beating 1/2 cup (1 stick) butter until fluffy, add powdered sugar and mix for 3–4 minutes until fluffy. Warm 2 tablespoons milk until lukewarm and add along with 2 tablespoons instant coffee; mix well. Let cool, then add to buttercream mixture. Turn cake out onto a work surface lined with plastic wrap. Do not remove paper yet! Cut cake into 3 equal layers. Leave paper on! Line the backside of a cookie sheet with plastic wrap. Place one cake layer on it. Remove paper. Moisten with 1/3 of coffee syrup using a pastry brush. Retain 2 tablespoons of buttercream frosting aside and spread the remaining amount onto moistened cake. Place second cake onto assembly and remove paper. Moisten with another third of syrup. Spread slightly more than half of the thickened ganache onto the 2nd layer. (Should be consistency of mayonnaise.) Cover with last cake layer and remove paper. Moisten cake layer with syrup and place in refrigerator for at least 30 minutes. Spread about 2–3 tablespoons of ganache onto the surface of the cake, just to seal the “pores” of the cake. Place bowl with remaining ganache over low simmering pan of water until ganache thins to a fluid consistency. Pour onto surface of cake and spread evenly. Place in refrigerator for 15–30 minutes. Cut / trim sides of cake to expose layers. Place remaining buttercream in a small piping bag and write Opera on the surface or decorate with coffee beans. Remove cake from refrigerator 1 hour or more before serving. _________________________________________________________ 2. RECIPE OPERA CAKE Prepare the Mona Lisa Cookie: 4 eggs 125 g icing sugar 125 g ground almonds 20 g melted butter 30 g of flour 3 egg whites For the Coffee Buttercream: 4 egg yolks 100 g caster sugar 30 ml of mineral water preferably 160 g of softened butter 3 tsp coffee extract Coffee Syrup: 80 ml of coffee 50 g caster sugar Chocolate Ganache: 120 g of dark chocolate 120 ml full cream For the Chocolate Icing: 130 g dark chocolate 15 g grape seed oil PREPARATION: Mona Lisa Cookie: Melt the butter, set aside. Preheat the oven to 150 °C rotating heat and cover two 30x40cm baking sheets with lightly greased baking paper. In the bowl of the food processor, whisk the eggs with the icing sugar to whiten the mixture and triple in volume. Add the ground almonds and whisk again. Remove the bowl from the food processor and add the cold melted butter, mix gently. Sift the flour over the mixture and mix in the same way. Assemble the egg whites in supple snow and incorporate them delicately. Divide the Mona Lisa biscuit maker in 2/3 1/3 on the baking sheets. Spread the device with a spatula to form a rectangle of 20×40 cm on a plate and a square of 20 cm from side to side. Bake the cookies for 20 minutes of baking. The cookies should be golden but not stick to the finger. The cooking time may vary depending on the oven. Take out of the oven and let the cookies cool to room temperature. Chocolate Ganache Bring the liquid cream to the boil and pour it, in three batches, over the chocolate, stirring vigorously to create an emulsion. Reserve at room temperature. Montage of the Opera at the Café Prepare a 20 cm side frame on the serving dish. Place a Mona Lisa cookie the size of the frame at the bottom of the mold and moisten it with syrup with a brush. Bake the kuglof for 40 min. at a temperature of 170 °C, with the first 20 minutes baking covered with aluminum foil.
