Spinach Lasagna

  • Phenomenal lasagna with spinach, it is very tasty, try to make. Follow recipe.

Ingredients: simple, total time: 110 min
  • 1 Tbsp olive oil

  • 1 onion/ finely chopped

  • 2 clove garlic/ crushed

  • 900 g orange gold pumpkin peeled/ cut into 1.5 cm cubes

  • 2 × 400 g cans brown lentils rinsed/ drained

  • 1/2 cup vegetables stock

  • 690 g bottle of tomato paste

  • 500 g ricotta

  • good pinch ground nutmeg

  • 375 g packet fresh for lasagna

  • 120 g packet baby spinach /trimmed finely shredded

  • 1 and 1/2 cup tomato paste + tasty cheddar

  • rocket leaves to serve

  1. Preheat oven to 190 °C. Grease 26 × 20 × 6 baking dish.

  2. Heat the oil in a large saucepan over medium heat.

  3. Cook the onion about 5 min., until soft and lightly browned. Add the garlic and cook 1 min. Add pumpkin, lentils, and stock and stir well.

  4. Reserve one cup of the paste and stir the remaining paste in the pumpkin mixture. Cover and bring to boil, reduce heat slightly and cook covered for 20 min. or until pumpkin is tender and the mixture is thick, transfer to a large bowl to cool slightly, then refrigerate until cold.

  5. Meanwhile, use a fork to mash ricotta in a bowl. Stir in nutmeg. Season. Line the base of the prepared dish with a layer of lasagna sheets. Spread over half of the pumpkin mixture, then top with another layer of lasagna sheets.

  6. Sprinkle with ricotta mixture and use damp fingertips to spread evenly. Top with spinach, then cover with another layer of lasagna sheets.

  7. Spread over remaining pumpkin mixture, then top with remaining lasagna sheets.

  8. Spread over the reserved paste to cover completely. Sprinkle with Cheddar cheese. Bake 45 min. until golden and cooked through. Serve with rocket.
