  • 450 g gnocchi

  • Olive oil EVO to taste

  • 2 cloves of garlic/ minced

  • 300 ml Tomato sauce paste made of San Marzano tomatoes

  • 2 tsp dry basil

  • 2 tsp oregano/ or to taste

  • salt and pepper to taste

  • 150 ml water/ or as needed

  • 480 g grated mozzarella/ or 2 large mozzarella

  • fresh basil leaves for decoration

  • 70 g grated Parmesan for sprinkle/ divided


Preparation:

Preparation Sauce:

  1. Warm the olive oil over low to moderate heat.

  2. Incorporate the chopped garlic, stirring for approximately 10 seconds, then add the tomato pesto sauce, basil, oregano, and season with salt and pepper to taste. Add a small amount of water and allow it to simmer for around 10 minutes.


Cooking gnocchi:

  1. Meanwhile, pour water into a pot for the gnocchi and add a teaspoon of salt. Once it reaches a boil, introduce the gnocchi and cook for approximately 3-4 minutes.


Combine Gnocchi and sauce:

  1. Drain the gnocchi, transfer them to the tomato sauce, and gently stir with a wooden spoon.

  2. Pour one spoonful of the sauce onto the bottom of a 20x20 cm baking dish, drizzle with olive oil to taste, and add half of the gnocchi.

  3. Distribute half of the mozzarella evenly between the rows and across the surface. Sprinkle with Parmesan cheese to taste.

  4. Add the remaining gnocchi and repeat the mozzarella step. Season with oregano and grated Parmesan to taste.


Baking:

  1. Bake in a preheated oven at 200°C for approximately 10-12 minutes.

  1. Sorrento gnocchi, garnished with Parmesan and fresh basil, is complete.
