Ingredients: simple, total time with standing: 140 min.
Sponge cake:
8 eggs
240 g granulated sugar
1 tsp vanilla
185 g flour
2 tsp baking powder
2 tsp corn starch
Cream:
500 g Cream cheese/ softened
250 g Mascarpone
250-320 g powdered sugar / or to taste
3/4 tsp almond extract
2 tsp vanilla
500 ml heavy cream
Syrup:
500 ml water
150 g granulated sugar
Berries:
300 g strawberries/ chopped
200 g blueberries
130 g raspberries
140 g blackberries
Preparation:
Prepare two 25 cm round cake pans by lining them with parchment paper and applying nonstick spray. Set aside.
Sponge cake:
In the bowl of a stand mixer, use the whisk attachment to beat the eggs until foamy. Gradually add the sugar while continuing to beat at high speed.
Once the egg and sugar mixture is fluffy and airy, incorporate the vanilla extract.
Sift together the flour, baking powder, and corn starch. Carefully fold these into the batter using a large whisk, ensuring not to overmix to preserve the airiness of the batter.
Divide the cake batter evenly between the prepared cake pans and bake at 180°C/350°F for 20 minutes.
Allow the cakes to cool completely, preferably overnight. Once cooled, slice each cake in half with a serrated knife.
Cream:
In the bowl of a stand mixer, combine softened cream cheese, mascarpone cheese, powdered sugar, almond extract, and vanilla extract.
In a separate bowl, beat the heavy cream with an electric mixer until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture using a spatula.
Cover with plastic wrap and refrigerate for at least 1 hour.
Syrup:
Meanwhile, in a saucepan, whisk together 500 ml water with 150 g sugar. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes until the mixture thickens, forming the syrup.
Brush one side of each cake layer with the syrup.
Assambling cake:
Begin assembling the cake by spreading the cooled cream cheese filling over the first cake layer, then add a selection of berries to taste.
Place another cake layer on top and repeat the process.
Continue stacking until all four cake layers are used.
Finish by covering the top and sides of the cake with the remaining cream.
Garnish with additional berries for an attractive presentation.

I put a minimum amount of sugar because I limits it, but you can put more in the cream if you want, or use a sweetener like Stevia or maple syrup, or honey.
Keep the cake covered in the refrigerator for up to 3 days.
