  • 20 small shrimps

  • 150 g of chickpeas

  • 2 Tbsp of Olive oil EVO

  • 1 shallot/ finely chopped

  • thyme to taste

  • salt and pepper to taste


For Frying:

  • 1 egg

  • 100 g of breadcrumbs

  • seed oil

Preparation:
  1. Finely chop the onion and sauté it in olive oil until softened.

  2. Add the previously cooked instant chickpeas and thyme, cook for 5 minutes, and then blend the mixture.

  3. Allow the mixture to cool before incorporating the egg. Season with salt and pepper to taste.

  4. Thaw the shrimp, remove the heads, and peel them, leaving the shell on the tail.

  5. Shape the mixture into croquettes, insert the shrimp, reshape the croquettes, coat them in breadcrumbs, and fry in hot oil.

  6. Serve the croquettes hot. (For added flavor, you may include sesame seeds: lightly toast them in a pan without oil, mix with breadcrumbs, and proceed with frying. The sesame seeds will enhance the flavor and aroma.)
