Prawns Surimi Salad in Sauce Lena

  • Since I live in Italy, I have gotten into the habit of using more seafood. Therefore, I am a fan of fish and seafood, otherwise I make it quite often. Today I will present one of my favorite recipes, how I usually prepare prawns as an addition to fish. You can make a base with some good salad such as arugula, boiled potatoes or a mixed salad of the Mediterranean type. I believe you will like this dish after all these holidays, something a little lighter for a change, :) follow the recipe.

Ingredients: simple, total time: 25 min. 2 servings
  • 340 g Surimi prawns/ 2 pack (160g)

  • 1 slice of lemon/juice

  • 100 ml olive oil EVO

  • 120 ml liquid sour cream

  • 2 cloves of garlic/finely chopped

  • 1 teaspoon dry parsley

  • 1 teaspoon red pepper flakes

  • 1 full Tablespoon of fresh parsley/finely chopped

  • salt and pepper to taste

  • 70 ml white wine /if you do not use wine, you can add chicken broth or vegetable broth

Preparation:
  1. You will first make the marinade for the surimi prawns, I have bought 2 packs already cleaned in a box you can find in any supply store.

  2. Take a deep bowl and put the prawns, then pour olive oil and add finely chopped garlic, salt, and pepper to taste, mix and let it rest for 15 minutes.

  3. In the meantime, take a deep-frying pan and pour a little olive oil, wait for it to heat up on a slightly moderate heat. Pour the prawns with the marinade and fry each side for about 1 and a half minutes. They should get a blush pink color. 3 minutes total. Then take them out of the pan and reduce the heat. You will continue to make the sauce for these prawns.

  4. Add red pepper flakes, then white wine, wait for the alcohol to evaporate, then add dry parsley and liquid cream, mix the ingredients well. Cook for about 5–7 minutes on the low heat. Add seasonings, salt, and pepper if necessary. The sauce must be well combined. After that, add lemon juice and mix well again. Turn off the heat, add prawns, and decorate with fresh parsley. To serve immediately! You can serve a dish prepared in this way as a side dish with sea fish, together with Swiss chard and boiled potatoes. Buon appetito!

NOTE: If you don't use white wine, you can replace it with chicken soup or vegetable broth, but never with beef broth, it will give other taste.
