Ingredients: simple, total time: 75 min.
Biscuit
50 g almonds
100 g of powdered sugar
2 eggs
100 g butter
1 Tablespoon rum
1 lemon peel
1 cup drained wild strawberry sweet/jam
For the Cream:
2 egg yolks
2 eggs
40 g of sugar
1 vanilla sugar/ 10 g
200 g dark chocolate
400 ml sweet cream
Glaze:
500 ml sweet cream
250 g of chocolate
Preparation:
Biscuit:
Cream the butter, vanilla sugar, and sugar until light and fluffy.
Incorporate the eggs, ground almonds, rum, and lemon zest.
Mix until a smooth batter is achieved, then transfer it into a cake tin that has been greased with butter and lined with baking paper.
Bake at 180°C for 15 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the baked biscuit to cool before spreading it with wild strawberry jam. Raspberry jam may also be used as per the original recipe.
Cream:
In a double boiler, combine the eggs, yolks, and sugar, mixing until slightly thickened and the sugar dissolves.
Add the chocolate, allowing it to melt, and once the mixture is creamy, remove it from the heat to cool using steam.
Whip the heavy cream and gently fold it into the cooled chocolate mixture.
Apply the cream evenly over the cake and refrigerate until set.
Once the cream has thickened, prepare the chocolate glaze by boiling the cream and mixing it with chocolate until melted and slightly cooled, then pour it over the cake.
