Biscuit crust:
350 g of lean biscuit
1 bag vanilla sugar/ 10g
130 g of lean margarine
100 ml of orange juice
Fruit layer:
350 g of raspberries
6 Tbsp of granulated sugar
130 ml of water
2 Tbsp of density/ or strawberry pudding, raspberry
Coconut filling:
700 ml of water
7 Tbsp of granulated sugar
2 bag vanilla pudding or sweet cream/80g
130 g of lean margarine
70 g of lean white chocolate for cooking
3 Tbsp of whipped cream/ separate from the whipped cream,.
150 g of shredded coconut
and more:
Beat 150-200 g of whipped cream according to the instructions with mineral water
some grated lean dark chocolate for decoration
Preparation:
Biscuit:
In a deep bowl, add ground biscuits, vanilla sugar and mix. Add melted butter and orange juice, mix all ingredients well.
Line a 24 cm round mold with baking paper, pour the mixture and level the base with a spoon. Put the mold in the fridge while you make the cream.
Fruit Layer:
Combine 2 spoonfuls of thickener or pudding with 50 ml of water.
In a saucepan, add the raspberries, sugar, and 50 ml of water, and cook over low to medium heat until it reaches a boil.
Once boiling, reduce the heat and incorporate the pudding mixture, stirring until a thicker consistency is achieved.
Remove from heat and allow to cool for one minute, then pour over the base.
Evenly spread the filling and place the mold in the refrigerator to chill.
Coconut filling:
Pour water into the pan and cook over low to moderate heat.
Once the water is warm, add sugar and two bags of pudding, stirring thoroughly until the mixture is smooth and thick.
Add diced lean butter and quickly whisk with a wire whisk.
When the butter has melted and the cream is smooth and thick, remove from heat. Pour the mixture into another bowl, cover with plastic wrap so that it touches the surface, and allow it to cool at room temperature.
While the cream is cooling, whip the whipped cream with sour water using a mixer until stiff peaks form.
Continue cream:
Using a mixer, beat the cooled vanilla cream and incorporate 2 tablespoons of whipped cream.
Subsequently, gradually add the shredded coconut and thoroughly mix using a spatula.
Assembly cake:
Evenly distribute the vanilla and coconut mixture over the thoroughly chilled fruit filling, smoothing the surface with a cake knife.
Reserve one-third of the whipped cream for the cake's sides, spreading the remainder over the top and smoothing it with a cake knife.
Garnish the cake with grated chocolate, then allow it to cool for approximately 4 hours, or preferably overnight, to ensure it sets properly.
Slice the cake and serve.
