Melon parfait is one of my absolute favorite desserts, especially during the warm summer months when fresh fruits are at their peak. The combination of sweet, juicy melon and creamy ice cream creates a delightful treat that is both refreshing and indulgent. Here is a detailed recipe for how I prepare this delicious melon parfait in a very simple way, and it always turns out fantastic, pleasing both my palate and those of my guests!
Ingredients
1 kg of grated melon - I prefer using ripe cantaloupe or honeydew for their sweetness and vibrant flavor, but you can choose any variety you like. Make sure the melon is fresh and perfectly ripe to enhance the overall taste of the parfait.
5 tablespoons sugar - This amount can be adjusted based on the sweetness of the melon. If your melon is particularly sweet, you might want to reduce the sugar slightly. The sugar not only sweetens the dish but also helps to draw out the juices of the melon, creating a lovely syrupy consistency.
Juice of 1/2 orange or lemon juice - Freshly squeezed orange juice adds a wonderful citrusy brightness to the parfait, balancing the sweetness of the melon and sugar. The acidity from the orange juice enhances the overall flavor profile and adds a refreshing zing.

Next, sprinkle the grated melon with the sugar and gently toss to combine. Allow it to sit for about 10-15 minutes. This resting time will allow the sugar to dissolve and the melon to release its natural juices, creating a sweet syrup that will enhance the flavor of the parfait.
After the melon has rested, add the freshly squeezed orange juice to the mixture. Stir well to ensure that the flavors are evenly distributed throughout the grated melon.

900 g -1 kg ripe melon/ or watermelon
5 -7 Tbsp granulated sugar
1 Tbsp lemon juice
4 .5 Tbsp Mascarpone
100 -150 double cream/ whipped
50 g-60 g soft amaretti Italian biscuits/ crushed
Preparation:
Cut the melon in half and remove all seeds, discarding them.
Extract the flesh from the shell and set the empty shells aside to use as containers for the parfait.
Chop the melon flesh and combine it with sugar, lemon juice, and mascarpone.
Blend the mixture until smooth, then pass it through a fine-meshed sieve. Set aside approximately half of the puree.
To the remaining half, add whipped cream and crushed amaretti biscuits, mixing thoroughly.
Pour the mixture into the empty melon shells, cover with cling film, and freeze for several hours or overnight.
Remove from the freezer about 30 minutes before serving.
Cut into wedges for serving and accompany with the reserved melon puree.

Use leftover melon puree to make smoothie or milkshake.
