  • 1 cup of washed rice-250 ml/ Arborio

  • 2 artichokes/ or already cooked 250 g, diced

  • 3 Tbsp Olive oil EVO/ or to taste

  • 1/2 medium chopped onion/ finely chopped

  • 250 g of button mushrooms/ sliced

  • 1 large clove of garlic/ minced

  • 1 hadfull of chopped parsley/ finely chopped

  • 30 g of butter

  • 500 ml Porcini stock

  • 1 Tbsp of grated Parmesan cheese

  • salt and black pepper to taste

Preparation:

  1. Prepare the artichokes and mushrooms by cleaning and slicing them into wedges. If using pre-cooked artichokes, simply strain and cut them, then set aside.

  2. Sauté the onion in a pan with three tablespoons of olive oil over medium-low heat until softened.

  3. If using fresh artichokes, add them at this stage and sauté for a few minutes.

  4. Add the cleaned and chopped mushrooms, season with black pepper and a pinch of salt. Cover the pan and cook on low heat until the mushrooms release their liquid and it evaporates.

  5. Once the liquid has evaporated, incorporate butter and chopped garlic, stirring. When the garlic becomes fragrant, add the washed rice and mix thoroughly for about a minute. If using pre-cooked artichokes, add them at this point.

  6. Pour in half of the porcini broth. Cook over low to moderate heat for approximately 12 minutes, stirring occasionally.

  7. After this time, add the remaining broth along with an additional 100 ml of water. Continue cooking for another 12-15 minutes, then garnish with chopped parsley and a sprinkle of grated Parmesan.

  8. Serve immediately while warm, accompanied by additional grated Parmesan cheese.
