Ingredients: simple, total time: 30 min., 3 servings
Olive oil EVO to taste
1/2 red onion/ finely chopped
300 g fresh sausages/ mashed
1 cup Carborio rice/ 250 ml
salt and black pepper to taste
650 ml broth/ water +1:2 cube for soup
15 g butter
1 tsp dry parsley/ or oregano
grated Parmesan for sprinkle
Preparation:
Finely chop the onion and put it in a deep and large pan to fry for about 3-4 minutes until soft.
Add the mashed sausage and simmer until the liquid evaporates to low moderate heat.
In the meantime, prepare the broth, pour 650 ml of water and 1/2 soup cube. When it boils, remove from heat.
Add the rice and stir for about 1-2 minutes, then pour over half the broth.
When the rice has swollen, add the rest of the broth and spices to taste, continue cooking for another 12-13 minutes.
Five minutes before the end, add butter, stir gently, then remove from heat.
Serve warm with grated Parmesan cheese.
