  • Dessert ring 20.3 x 5 cm

  • 25.4 x 5.1 cm Round Cake Pan

The Genoa:

  • 3 eggs

  • 90 g sugar

  • 70 g of flour

  • 30 g of cornflour

  • Strawberry red- powder coloring


Musseline Cream:

  • 1/2 liter of whole milk

  • 5 egg yolks

  • 120 g granulated sugar

  • 50 g cornstarch

  • 180 g softened butter/very, very soft


Assaembly and Decoration:

  • 400 g strawberries

  • 100 g white almond paste to taste

  • 150 g whipping cream

  • 90 g of Mascarpone

  • 40 g icing sugar

  • Strawberry flavor/ optional

Preparation:

  1. Preheat the oven to 180 °C.


Sponge cake:

  1. In a double boiler, whisk the eggs and sugar until the mixture reaches 45°C. Remove from the heat and continue whisking with an electric mixer until the mixture doubles in volume and cools.

  2. Combine the cornstarch, flour, and a small amount of powdered red food coloring. Gently fold this into the egg mixture.

  3. Prepare your cake pan by buttering and flouring it, pour in the sponge cake batter, and bake for 15 - 20 minutes.

  4. Once baked, allow the sponge cake to cool on a rack.


Cream:

  1. Heat the milk in a small saucepan. In a separate bowl, whisk the egg yolks with the sugar, then add the cornstarch and sifted flour, mixing well.

  2. Gradually pour the hot milk into the egg mixture while continuously whisking. Add the vanilla extract.

  3. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the cream thickens.

  4. Pour into a dish, cover with plastic wrap directly on the surface, and let it cool completely.

  5. Ensure that both the butter and pastry cream are at the same temperature to prevent curdling. In an electric mixer, whip the butter and gradually incorporate the pastry cream until it reaches a mousse-like texture.

  6. Slice the sponge cake into two discs, each 5 - 7 mm thick. If necessary, cut three discs, ensuring one is very thin, to avoid overly thick layers.


Syrup:

  1. Prepare the syrup by cooking the sugar with water and a few drops of strawberry flavoring for 5 minutes.

  2. The syrup should remain liquid and not overly reduced.


Assambling cake:

  1. Line the inside of the dessert ring with a rhodoid ribbon. Place one sponge cake disc at the bottom of the ring and moisten it with half of the syrup using a brush. If needed, trim the discs to fit the dessert ring.

  2. Cut approximately a dozen strawberries in half, ensuring they are of uniform height for consistency, and arrange them around the inside of the ring.

  3. Cover with mousseline cream, ensuring the strawberries are well positioned around the circle.

  4. Dice the remaining strawberries and place them in the center of the structure. Cover with more mousseline cream, then position the second sponge cake disc on top. Moisten it with the remaining syrup.

  5. Roll out 100 g of almond paste thinly and gently place it a top the dessert. Trim any excess with a rolling pin.

  6. Refrigerate for at least two hours before serving.


Decoration:

  1. Prepare whipped cream by combining whipping cream with very cold mascarpone. If desired, add a few drops of strawberry flavoring.

  2. Gradually incorporate the sugar. Once the whipped cream is firm, transfer it to a piping bag fitted with a Saint-Honoré piping tip. Carefully remove the dessert ring from the strawberry preparation, followed by the rhodoïd.

  3. Pipe the whipped cream onto the strawberry preparation, starting with an initial round, followed by successive rounds until a dome is formed. Serve promptly.

NOTE:
  • The sponge cake should be baked in a mold slightly larger than the dessert mold, as it will shrink slightly during baking. Alternatively, you may bake the sponge cake in your dessert ring and arrange the strawberries around it afterward, though this may be more challenging.
