Preparation:

Cream:

  1. Using a hand whisk, blend the eggs thoroughly, then incorporate the sugar, vanilla sugar, and vanilla seeds into the mixture.

  2. Next, add the cornstarch and stir well. Gradually pour in the milk, whisking continuously. Place the mixture over moderate heat and continue to stir until a thick and cohesive cream forms.

  3. Transfer the cream into a glass jar, cover it with cling film, and allow it to cool completely at room temperature.

Dough:

  1. In a medium-sized pot, combine water, milk, a teaspoon of sugar, a pinch of salt, and cubed butter. Heat over medium heat, stirring constantly.

  2. Once the butter has fully melted, remove the pot from the heat and add the peel of half a lemon.

  3. Gradually incorporate the flour, stirring continuously.

  4. As the mixture thickens, use a spatula to press and compress it until well combined. Once the mixture is cohesive, return it to the heat for an additional minute, then remove from the heat.

  5. Transfer the dough to a deeper bowl and allow it to cool for 3 minutes.

  6. In a separate deep bowl, whisk 4 eggs using a hand whisk.

  7. Gradually add the eggs to the dough mixture, using a spatula to ensure thorough integration.

  8. The dough is ready when it adheres to the spatula and does not fall off.

Processing:

  1. Draw a circle with an 18 cm diameter on baking paper and place it on the baking tray.

  2. Transfer the dough mixture into a piping bag without any attachments, and trim the tip with scissors to create a slightly larger opening.

  3. Pipe the mixture along the outline of the circle; ensure the layer inside the circle and the additional two layers above it are 7 cm thick.

  4. Use the remaining dough for making baskets, similar to the preparation of princess donuts.

  5. Brush all the dough with the remaining beaten eggs.

  6. Sprinkle the circle with flaked almonds.

  7. Bake the cake at 170°C for 30-35 minutes.

  8. Allow it to cool slightly.

Processing: making the cream for the cake

  1. Whisk the butter until it becomes foamy, then gradually incorporate the cooled cream while continuing to whisk with a mixer.

Processing cake:

  1. Divide the baked dough into two equal circular sections.

  2. Apply the cream to the lower section of the pastry and place the upper section on top.

  3. Fill the princess donuts with the remaining cream and assemble; refrigerate for 3 hours to cool.

  4. Once the cake has fully cooled, dust with powdered sugar.

Buon appetito!

"A recipe may begin with ingredients, but its true flavor comes from the love and memories shared through it." ☕🍰🌹

NOTE:
  • For efficiency, consider purchasing pre-made puff pastry; at least two packages are required. To create the circle, use a round template for easier cutting, then select a smaller plate to cut accordingly. Use the rest of the dough to make some smaller pastries.

  • Store the cake in the refrigerator, covered with a lid, for up to 4-5 days.
