Julia's Stew Paprikash

  • While it remains uncertain if any "Romeo" has had the opportunity to sample this specialty, Julia's chicken stew comes highly recommended for all culinary enthusiasts, regardless of their name. The Hungarian variant of Julia's stew is a delightful blend of meat, mushrooms, and vegetables, which can be served with pasta, rice, or boiled potatoes. This stew is typically thicker, as it is meant to be poured over other dishes, but you can adjust the consistency to your preference. Please refer to the recipe for guidance.

Ingredients: simple, total time: 1h and 20 min, 4 servings
  • 1 whole chicken/ cut into pieces

  • 100 g of smoked bacon/ cut into strips

  • 1 Tablespoon red ground pepper

  • 2 fresh green peppers or red/ diced

  • 2 big tomatoes/ diced

  • 150 g of fresh mushrooms/ cut into leaves

  • 1 onion/ finely chopped

  • 2 Tablespoons spice mixture/ Vegeta

  • 2 cloves garlic/ finely chopped

  • 100 ml of sour milk

  • 1 Tablespoon flour

  • 100 ml water

  • salt and ground black pepper to taste

  • water as needed

Preparation:
  1. Finely chop the onion and garlic.

  2. Heat a small amount of oil in a deep pan and sauté until the garlic becomes fragrant.

  3. Add the chopped bacon strips, stir, and cook for a few minutes.

  4. Incorporate the chopped chicken pieces, salt, and pepper. Add water if necessary to cover the meat.

  5. Add one teaspoon of dry spice or Vegeta.

  6. Cook for approximately 15 minutes.

  7. After this time, add the sliced mushrooms and ground red pepper. Continue cooking for about 15 minutes over moderate heat.

  8. Meanwhile, deseed and dice the pepper, then add it to the pot.

  9. Dice the tomatoes and add them immediately. Cover the pot and cook until the vegetables are soft and the meat is tender, approximately 25 minutes over low to moderate heat. Add water as needed to achieve the desired consistency.

  10. In a medium bowl, combine sour cream, flour, and 100 ml of water, mixing until smooth.

  11. After 25 minutes of cooking, add the flour and sour cream mixture to the stew, reduce the heat, and cook for an additional 5 minutes. Remove from the stove. The dish is ready to serve. Garnish with parsley and lemon.

  12. This stew can be served with boiled potatoes, rice, pasta, or porridge.
