250 g washed rice Italian Arborio
1 kg mussels with shells
2 cloves of garlic/ minced
salt and pepper to taste
500 ml fish broth
3 Tbsp Olive oil EVO/ or to taste
200 g cleaned prawns
200 g clams
270 ml tomato pulp / or Italian tomato passato sauce
150 ml dry white wine
2 Tbsp fresh parsley leaves/ finely chopped
Preparation:
First prepare all the ingredients as described above.
Mussels and Clams:
Immerse the mussels in saltwater for several hours to eliminate any residual sand they may contain.
Meanwhile, clean the mussels thoroughly using a metal wire brush, remove the byssus threads from the shells, rinse them, and place them in a bowl.
Rinse the clams thoroughly and add them to the pot with the mussels.
In a large pan, heat the olive oil and crushed garlic. Once aromatic, add the mussels and clams, cooking them until they open, approximately 10-12 minutes. During this time, incorporate the white wine.
Turn off the heat and allow them to cool before peeling to avoid burns.
Retain the cooking liquid, as it may be required later.
Making Risotto:
In a large frying pan with high sides, add 2 minced garlic cloves and extra virgin olive oil. Introduce the shrimp and sauté until they achieve a golden brown color.
Add the rice and sauté with the shrimp, stirring constantly. After a few seconds, pour in the white wine.
Incorporate the tomato pulp and half of the fish stock, strained through a sieve, and cook for at least 15 minutes over medium heat.
