    After the wine has reduced, stir in the tomato passata and beef broth, allowing the mixture to come to a gentle simmer. It is at this point that the herbs, salt, and pepper should be added. Lower the heat and let the risotto cook slowly, stirring occasionally to ensure even cooking and to prevent sticking. The cooking process should take at least 2 hours, during which the beef will become tender, and the flavors will deepen.

Ingredients: simple, total time: 2 h, 4 servings
  • 4 Tbsp of Oive oil EVO

  • 300 g of onion/ finely chopped - 1 large onion

  • 500 g of veal shoulder/ diced

  • 1 tsp of each salt and black pepper/ or to taste

  • 2 cloves of garlic/ minced - optional

  • 1 tsp thyme or basil/ optional

  • 120 ml of dry white wine

  • 150 ml tomato passato/ or 2 full Tbsp tomato concentrate

  • 1. 5 liters of beef stock

  • 250 g of Carnaroli rice/ well washed

  • 50 g of butter

  • 1 Tbsp grated Parmesan cheese

Preparation:
  1. Prepare all ingredients as described and begin the cooking process.

  2. In a large wok, sauté the onion in olive oil until softened, approximately 10 minutes. Add the cubed beef, season lightly with salt and pepper, and stir.

  3. Cover the pan and cook over low-medium heat until the meat's liquid evaporates, allowing the onion to blend into the sauce. Stir occasionally.

  4. Add the white wine and allow approximately 7 minutes for the alcohol to evaporate.

  5. Add minced garlic and thyme to taste, if desired.

  6. Once the garlic is aromatic, gradually incorporate the stock in two portions (1 liter total) and cook until the meat is thoroughly tender, approximately 1 hour and 20 minutes, stirring occasionally while covered.

  7. As the broth is added, incorporate the tomato passata and mix well.

  8. Once the meat is tender, add the washed rice and the remaining 500 ml of broth. Cook until the rice is al dente. Adjust seasoning as necessary.

  9. Finally, add the butter and Parmesan cheese, stirring quickly until melted, then turn off the heat.

  10. Serve warm, garnished with Parmesan cheese as desired.

Advice and Tips:

  • Parsley can be added at the end of cooking if desired, although it was not included in this preparation.

  • As an alternative to tomato passata, you may use tomato concentrate combined with two teaspoons of sugar and 150 ml of water.

  • When selecting meat, opt for a high-quality piece free of fat and sinews, as this significantly influences the risotto's flavor.

  • While cooking risotto, stir occasionally, particularly when adding tomato passata, to prevent burning.

  • Ensure the rice is cooked to an al dente texture, avoiding overcooking and mushiness, in true Italian style.

  • Store any remaining risotto in a glass container with a lid for up to one to two days.

  • Reheat using a frying pan or microwave.
