Simple Croquettes

  • Deliciously simple potato croquettes that are quick and easy to prepare. Follow the recipe for best results.

Ingredients: simple, total time: 70 min. 4-5 serving

Dough:

  • 750 g potatoes boiled in skin

  • 1 egg yolk

  • 1 teaspoon salt

  • pinch of pepper/ or to taste

  • pinch of nutmeg

  • 80 g grated Parmesan cheese

  • 30 g flour

  • 1 Tablespoon baking powder


For Rolling:

  • flour as needed

  • breadcrumbs as needed

  • 2 egg yolks

  • 80 g butter


and:

  • plenty of vegetable oil

Preparation:
  1. Thoroughly wash the potatoes and place them in water to boil for approximately 25–30 minutes.

  2. Subsequently, allow them to cool for 20–25 minutes, then peel and grind them using a machine.

  3. Transfer the ground potatoes to a deep bowl and incorporate one egg yolk, salt, nutmeg, pepper, grated Parmesan, flour, and baking powder. Knead the mixture into a soft and smooth dough.

  4. Once prepared, divide the dough into four portions and roll each into a smooth, thin cylinder.

  5. Cut each cylinder into 5 cm segments.

  6. Lightly flour a tray, arrange the small rolls, and roll them gently.

  7. Using a hand whisk, blend the melted butter and egg yolks into a uniform mixture, then add a small amount of flour to achieve a slightly thicker consistency, similar to pancake batter.

  8. Coat the small rolls in the egg yolk, butter, and flour mixture, then thoroughly cover them with breadcrumbs on all sides.

  9. Proceed to fry them immediately in hot oil.

  10. Fry until they are golden brown on all sides.

  11. Place the fried rolls on a kitchen towel to absorb any excess oil.

  12. Serve while warm.
